    What I appreciate about your channel because you actually are using a grill that looks like it’s been used. Several other channels It looks like they’re cooking on brand new grills. I’m following

      Thanks for the comment. Once I figure out how to boil water in the T, I'll get rid off the kitchen stove. Like Frank's hot sauce, I used that $#!t for everything 🙂

      We just got one Traeger and haven't figured it out yet the best way to cook fajitas. This original video was 3 years ago.
      If you cooked your fajitas at 500⁰, for how long did you cook each side? And how many times did you have to flip the fajita meat?

    Excellent grilling tip for a skirt steak. Now that Traeger has updated the software that allows their pellet grills to go all the way up to 500 degrees, this recipe gets even better with the higher temperature cook. Just remember to cut the cook time to no more than 3 minutes a side; I suggest 2 1/2 minutes per side for medium-rare depending on the thickness of your skirt steak.

    Great video! I usually do 4-5 mins per side so I only flip it once :)
    Another tip -- if you want to try a variation to make this steak extra tender, FOLD IT IN HALF on top of itself, then try cooking it for a little bit longer. It really seals the juices inside and you get a nice crispy outside with super tender inner folded piece.

    Here’s a couple tips here
    1. Soak in Goya mojo overnight
    2. Set smoker to 250 degrees
    3. Season with your favorite spices
    4. Now put on smoker till internal temp of 160 degrees( put probe in while cooking)
    5. Take off and wrap in butcher paper
    6. Now put skirt steak back on grill and put probe back in and cook @300 degrees
    7. Now cook till 200 degrees internal ( now remember this meat has the fat to render tender) about 20minutes
    8. Take off grill and leave rest while you heat up some tortillas
    9. Wrap tortillas in foil or butcher paper and leave for ten minutes
    10. Now open skirt steak and cut in half and then cut against the grain.
    11. Take tortillas off and enjoy with whatever you like.

    If we like our fajitas medium-well, what is the recommended temperature and cooking time? Any feedback is really appreciate it.

      Following this method, just do 1 minute more per side. The trick is the rest in the foil. Longer will get you to your medium well. Thanks for checking out the video.

    Thanks for sharing! I have kids that won't eat red or pink. I'm thinking 2 minute sear, rotate for 2 more minutes, and then flip. Do you think that will work if I cut thin slices? Looking forward to your advice.

      4 or 5 minutes a side and rest for 10. Don't forget the rest, AND don't forget to start at room temperature steak. Thanks for the comment! 😁

    Would you super smoke the steak if you had the option? If so, what would you do different on the cook?

      Probably not, Skirt steak should be seared on both sides. I have a reverse seared steak on my channel and that for sure would do super smoke if i had the option. This is ready way to fast. Just my opinion.

      Excessive smoke could ruin the steak]s natural flavor. But if you insist, I would try mesquite wood or mesquite chips over charcoal for smoke flavor.

    What temp do you grill at please?

      I prefer whatever Sam's club has in the two pack. That said, i prefer the outside since it requires less trimming.
