Made this today for myself and my girlfriend with raspberry chocolate, and it was phenomenal. Sadly I didn't have ceramic ramekins just lying around, so I had to use glass. However, it turned out delicious nonetheless. Just didn't rise quite as high. But still, utterly perfect. Thanks for another amazing recipe.

What "chocolate delivery systems" do you prefer? Fedex, UPS, Cruise Missile? I personally prefer the Ballistic for my ldr as it cuts out the middle man, but still has that big impact of a Cruise.
Why does Chef John use a roux for the chocolate base? I thought a roux was supposed to a thickener for sauces, etc. and a souffle is supposed to be light and airy. Wouldn't a roux work against the whipped egg whites in terms of texture?
Can you make any part of the soufflé in advance? Like mixing the flour and chocolate and then when you are ready for the soufflé whip up the egg whites? I've always wanted to try soufflés for dessert and this recipe looks Yummy.
