Epic Chocolate Salted Caramel Trifle Recipe | Cupcake Jemma

- Behold the almighty Trifle! The trifle to beat all Trifles. The Trifle that will W-O-W your family this Christmas.
After experiencing the stress and anxiety of being on the SortedFood Pass it On challenge in which Sally and Jemma "helped" to create (we are not taking any responsibility) a terrible trifle style dessert they have taken it upon themselves to give you guys the BEST Trifle ever known to man. This Trifle consists of Bourbon soaked Chocolate Sponge, Salted Caramel Creme Diplomat, Chocolate Custard, Chocolate Brownie, Caramel Cornflake Crunch and even more Salted Caramel.

CHOCOLATE CAKE
9” cake tin. Preheat oven to 150C fan assisted (170C non fan)
150ml buttermilk
150ml cooled down coffee
130ml veg oil
2 eggs
215g plain flour
240g caster sugar
40g cocoa powder
¾ tsp bicarbonate of soda
½ tsp salt
SALTED CARAMEL CREME
DIPLOMAT
- Saucepan
150g caster sugar
1 egg
3 egg yolks
3 tbsp cornflour
120ml double cream
480ml milk
1 tsp salt
1 tbsp vanilla
45g of cold butter
Double cream - same amount
as creme patissiere
BROWNIE
- 10” square tin. Preheat oven to 170C fan assisted (190C non fan)
165g 70% chocolate
165g butter
330g caster sugar
3 eggs
120g plain flour
45g cocoa powder
½ tsp baking powder
½ tsp salt
CHOCOLATE CUSTARD
Saucepan
600ml milk
4 egg yolks
2 tbsp caster sugar
1 tbsp cornflour
1/2 tsp salt
150g 70% chocolate
CARAMEL CORNFLAKES
Saucepan
300g caster sugar
200g double cream
1 tsp vanilla
1.5 tsp salt
100g cold cubed butter
140g cornflakes
SALTED CARAMEL SAUCE
- Saucepan
220g caster sugar
120ml water
245 ml double cream
1 tsp vanilla
1 tsp salt

I don't know, if it doesn't have beef sautéed with peas and onions, a little more custard, sliced banana and whipped cream, is it really worth it? 😂

Must taste like FEET! 😀
Little tip: warm the cream before pouring into the caramel. It reduces the thermal shock as the two elements are closer in temperature and prevents the forming of caramel nuggets.
You can also pour the cream into the caramel and whisk away

Warming both the milk and cream to blood temperature really works.
I love how they're using mixing bowls instead of dessert bowls because it's so massive!
You know you have a monster of a recipe when both sally and Jemma are together or the gang in general … and it never disappoints!

what I love about this is that you both used traditional handheld utensils to show that it can be done without the more high tech appliances. Absolutely need to add crumbs and doilies to my list when I'm in London next

I have to add more to my comments, I never make custard from custard powder as I prefer making it from scratch like with all my cooking. It just doesn't taste the same. I am an American living here in England and married to an English man who loves pudding and through your video, I learn how to make so many in fact I even create my own, something simple. I've done a similar trifle many times, recipe from Gemma Stafford (Bigger Bolder Backing). It is great. Good idea with the toppen.

Awh thanks. I think I was most likely tired! From eating too much sugar. Haha
We made this for Christmas dinner, and it was AMAZING. Unfortunately (fortunately) there is enough to serve 12 people, so we have plenty of leftovers. Not surprisingly, it is even better for breakfast :-). All that said, we didn't care for the cornflakes as they did not add sufficient crunch. Next time we will consider either honeycomb, peanut brittle, or heath bars for the crunchy topping.

Here’s a tip: if you want to make extra sure the cakes don’t stick to the cake pans, you can line them with parchment/wax/baking/grease-proof paper after buttering and flouring or spraying them with baking spray.
