From a Roman restaurant coookng course - Raw eggs are fine. What Nigella makes here (egg/marscapone cream) is similar to cream for tiramisu. Commercial eggs are washed before they hit the shelves. If they are not from a commercial source, put them in a colander and run some boiling water briefly over to sterilse them. Also to be safe, separate one egg at a time over a separate bowl and do not use this egg if any shell falls in - save it for scrambled eggs or some other use where it is cooked. Finally, if you do not add alcohol to this kind of egg/marscapone cream, it should be eaten on the same or next day. That is the test of a good tiramasu - it should not contain alcohol. Restaraunts put alcohol into tiramisu as a preservative.

Thanks to Nigella, I now always add nuts to my trifles to prevent them from being a delicious mush. Unfortunately, we haven't any "trifle sponge biscuits" here in the USA.
All you need is some sponge cake and let it go dry. One issue you might run in to is that Americans love their preservatives, so a factory sponge cake might not dry out. Try find a bakery, maybe?
Luscious...Interesting, the berry coated with the melted jam layer ...I use crumbled chocolate cake , custard ,crushed Marie biscuits ,diced fresh fruits then repeat the layers topped with roasted nuts...
My God, she was born in 1960, she turns 61 this year, she looks no older than 40! I was kinda disappointed to read that she has no Italian descent, I knew nothing about her and randomly found her today, she has dark hair and dark eyes, but that can't be the only reason to have her prepare an "anglo-Italian" trifle (nobody knows what a trifle is in Italy btw)
She spent many years living in Italy and she loved the food and uses bits and pieces of typical ingredients to Italianize her dishes! Bella mujer! ♥️♥️♥️♥️

Isn't there this very very small risk of salmonella contamination when using raw eggs? I saw the Master Chef, Australia judges, do the double flip and admonish a contestant once for having used raw eggs in the recipe. I find your recipes worth a try every time, Nigella!!!!
Have you ever been anywhere and I mean anywhere, as a child or adult and watched either age group eating raw cookie dough and seen anyone keel over licking a batter bowl? Ever? Anywhere? I think it answers itself. Eggs have been in existence for millenia, long before people knew of pasturizing, vaccinating, or antibiotic'ing and have gone so far as to swallow eggs raw for health purposes. Now, if you have maltreated, malnourished hens, I would worry for those facts themselves. Otherwise, may raw cookie dough and leftover cake batter bowls be revered by the masses forever!😍

My original comment was in fact, just an observation, comparing the attitudes of two good and established foreign chefs towards using raw eggs in dishes.... In Europe, all hens are required to be vaccinated against salmonellosis, and also there are pasteurized eggs, but yeah never eat row eggs if unsure
when you beat eggs and sugar the sugar ¨cooks¨ the eggs because of the heat produced by the speed and friction between the sugar crystals
they don't have mass animal cruelty and fuilthy conditions in europe as the factory farming conditions here
