Giving them lettuce is a homophone in China, which means getting rich
"恭喜发财" in English "Wish (you) getting rich." : Kung Hei Fat Choi, Gong Xi Fa Cai, or Kiong Hee Huat Chai, in which "Choi" (财 = fortune) sounds just like the "choy" of bok choy in the Cantonese dialect. Notice that some of the store owners would try to catch the bok choy leaves spit out by the Dancing Lion for the blessing at 22:25
