- TASTY, CREAMY, & SIMPLE VEGETABLE SOUP - This healthy homemade vegetable soup recipe is full of veggies. It's easy to make and good for your health. Serve it hot during winters and feed your family with the much needed warmth and nutrients this season.
This recipe is so flexible and customizable that you can add/remove any vegetable you like to get your desired taste.

Ingredients -
Butter - 2tbsp
Garlic chopped - 2tsp
Ginger chopped - 2tsp
Green chilli chopped - 1 tsp
Spring onion chopped - 3tbsp
Flour (all-purpose) - 1 tbsp
Cabbage chopped - ½ cup
Carrots chopped - ¼ cup
Corn kernels (boiled) - ½ cup
Capsicum chopped - ¼ cup
Beans chopped - ¼ cup
Green peas - ½ cup
Potato diced (raw) - ½ cup
Basil leaves - a sprig
Oregano - 1tsp
Chilli flakes - 1tsp
Thyme - 1tsp
Salt - to taste
Veg Stock/Water - 1lt
Salt
Pepper powder
Basil leaves - a sprig

This is is so tempting chef.
Soup is my staple dinner along with a salad. So I have learnt to make many versions. Mostly thanks to you and few other chefs like you.
For creamy vegetable soup I add a few cashews while roasting / frying the veggies. Then no need for flour. Can still add the flour if one likes.
I make veg stock at home and store in fridge. But at times I have used store bought stick cubes also.
Sometimes I add few chunks of paneer while blending if I am making for guests and want a richer soup.
Another small variation is that I roast 2 tsps of barley dalia and add while blending or couple of spoons of cooked barley.
All these make the soup thick and creamy without having to add flour or fresh cream. Also I dont add potatoes if I am adding all these.

Hi Kunal, I will really appreciate more soup recipes from u as all ur recipes r tasty but due to a health concern I am reduced to liquid diet/low spice diet. Btw the cauliflower/broccoli soup with Nigel seeds u have posted has become a regular in my meals. God bless u for that!!
