  • Welcome to Unboxing Betty! Join Melinda in the kitchen as she cooks her way through Betty Crocker’s 1971 Recipe Card Library. Our first card is for Tangy Tomato Aspic. This savory tomato jello served with shrimp salad, and is the epitome of atomic age cooking. Despite the wild presentation of this vintage recipe, the taste and texture were surprisingly palatable.

    my grandmother made chicken salad and aspic. her aspic had sliced green olives in it. she made hers with V8, and she served toasted, slivered almonds to serve on top. believe it or not, this was a very popular Southern lady luncheon dish.

      The first time I heard of aspic was from Alton Brown talking about how his grandma used to serve it at big parties. He's from Georgia

    I love my Tomato shrimp aspect.
    One box Lemon jello. Use V8 juice instead of water prepare jello add raw shredded 🥕 chopped celery and green onions add 2 cans of small tiny shrimp a shot of worsheshire, Tabasco and a pinch of garlic powder. Let set and serve with a dallop of mayo.

    Not a cook here, but the boxed "no sugar" jello is full of artificial sweetener. Should have used unflavored gelatin powder plus some lemon juice, surely...

    Always spray your pans for these “salads”. Metal pans are best if you need it to set up faster. Plastic I let chill overnight. If you forget to oil the mold you can *quickly* run the outside of your mold under hot water and it should release. I’d be curious to know if the gelatins of yesteryear were flavored and unsweetened. I’ve made a few similar salads and the sweetness ruins them. Im think unflavored gelatin with an appropriate extract might work well. Keep the vids coming…you are hilarious and I had to buy one of these Betty Boxes after seeing you and your colleagues having such fun. 😂🤣

That's a good point about the metal mold, it totally makes sense that it would set up faster. Thanks for the tip about spraying too, I'll definitely do that next time, so I don't lose a chunk in the mold!

    My great grandmother taught. to make her recipe . she used V8 lemon jello shredded carrots finely chopped celery chopped green onions worseshire Tabasco and2 cans of shrimp mix it all. Let it set . dollop of mayo. Of course bring your V8 juice to a boil then the lemon jello mix well and add all other ingredients.

    I will not sit by and listen to any blasphemy about this dish! Try it with grated horseradish. This dish dates back much earlier than the 1970s.

    Hi Melinda, I heard about your channel from Anna on Cooking the Books and I have been having fun browsing your videos. My mom used to make tomato aspic for luncheons with her friends, but I think she used Knox gelatin, lemon juice and tomato juice (or perhaps V-8). I remember tasting it as a child and not liking it at all. Thanks for a fun episode!

    Tomato aspic has a long and lovely history. My Mom made it a lot. It’s fabulous! Maybe it’s just not of your generation so you’re not familiar with it?

    Just use V8 juice to the jello.Add extra hot sauce to make it hotter. This was served as a side dish with seafood. Use a metal pan an cut into squares. You can make delicious summer salads using jello. At Christmas I use cherry jello an add a can of whole berry cranberry sauce I heat an add to jello. Add a can of drained mandrin oranges an chopped pecans. Old recipes are making a comeback.

    OMG! "sugar free" does NOT mean NO sugar! lmao. Its made with artificial sugar instead of cane sugar. I can not believe you have never made jello. You need to use Knox gelatin for these things really. Its unflavored and doesn't have sugar. I wonder if you could use bloody mary mix and knox gelatin instead of all the other stuff? hmmm...interesting thought. keep trying
