    Despite my many efforts to try, I earnestly don't like mushrooms. But I will definitely be trying this cacio e pepe risotto regardless!

    I usually fry off some onion and a clove of garlic and heat the rice in that. I'll be trying this method, looks delicious.

    what if you need to prepare for 10 persons? Everything 10 ten times the amounts?

      I doubt it. 100g of rice per person. I am not a chef but I do not see how 10 servings could be prepared in one batch since this would be almost two pounds of rice. Not to mention 50 or so pieces of mushrooms of your choice.

      @@lorenzomezzanotte12​​⁠ “Microplane” sarebbe il nome di quella grattugia ? Cosa ha di particolare ? Perché se ci penso bene, ci sarebbero altri modelli un po’ più pratici da usare.

      @@aris1956 si giusto é il nome della marca, in cucina professionale la usano quasi tutti. Hanno tanti modelli diversi però questa che vedi nel video è quella diciamo standard che hanno tutti. La cosa particolare è semplicemente che è di alta qualità e lo senti pure. 200 grammi di parmigiano le gratti in due minuti. Se gratti la scorza del limone, non gratta più dove comincia il bianco. Unica cosa è che costa un po‘… io ce l’ho per il lavoro in cucina dove viene usata spesso, ne vale la pena.
