Actually throw some shallots in the fire until the skin is all black then pell it off then beat it with a knife put it in the broth is much better than onion and it gives toasty and sweetness much much better. In Vietnam we usually use shallots more than onions for soup like this and it help enhance the flavour

That's looks so delicious and exotic. The several ingredients, herbs and fresh Cilantro seems to help set off the dish (with the dumpling, rice noddles and chicken), Beautiful blends.
My mom used to make chicken soup with veggies and sometimes ginseng. it takes a copy of hours to boil. For lunch, my mom would use the chicken stock and veggies to make Ramen for lunch
Since the chicken meat is already cooked, it's best to remove the meat because to make a soup broth, you want the bones to brought to a boil & then let it simmer a long time, maybe 1.5 hours. Add your veggies after that - the hardest ones are usually carrots. Put those in first. They take longer to cook. The veggies you choose to use have to be added in order of how long they need to cook. The water should be a constant simmer. You may want to add more water when you start adding veggies. If adding rice or other grains plan on how much time they need to cook. Some take 45 minutes. White rice takes less time, as does pasta. After they're done, add back your cut up meat & allow to sit covered on a very low simmer or just turn the burner off & leave the cover on. Add the herbs, S & P at the end while the meat is warming.
