    1 large egg yolk.
    Warm cheese with xantham
    Add yolk mix
    Sandwich between paper roll out
    Use pizza cutter form strands. Grease cutter
    Fridge

    I made up a triple batch and froze it in portions uncooked so when I want pasta I take it out "thaw" then cook. Works for me !

    I made this and it was the best keto pasta! I was afraid it would melt, but I timed it like you said and rinsed it. It didn’t melt when I added hot stroganoff on top. It had a perfect pasta texture. Love! I rushed the process a bit by putting it in the freezer a while.

      BTW, you may be a real DUFF if you are eating pasta made from a wheat other than durum wheat. Some Italians would laugh at you for being so superior when in fact, you probably have never had “genuine pasta.” 😁 @andrew5222 @KayDejaVu

    I just tried this recipe and it was AMAZING. Definitely need to set for the 8+ hours for cooking it. I ran out of parchment so I used a quart sized ziplok bag and rolled the pin over it while in the bag which formed a perfect edge as well as noodle thickness for the recipe and just ran the pizza cutter over while still inside the bag which perforated the pasta without cutting through the plastic. Opened the seal to get air inside while it set overnight then cut the bag open and they all released off of the plastic effortlessly! Excellent recipe especially with the xanthan gum addition (I tried both with and without). Thank you so much for sharing this 🌼

      What is alfredo sauce? I thought he used ketchup (which doesn't seem keto at all). Is alfredo sauce tomato sauce without sugar or other carbs?

      @@AJBonnema It's a white creamy sauce that you normally put in chicken Alfredo. Its delicious

      sounds to me like a cheese omelette with tomato sauce-why all the work? do we really need to find substitutes all the time? that said, my mom used to make "eggs in purgatory" which is just sunny side up eggs in sauce.

      @@carolbowen1693 Some of us enjoy spending time in the kitchen, cooking and eating mindfully. I read on his website that these "noodles" taste like the real thing. Do store-bought egg noodles taste like an omelet? Nope.

    Thank you! I've been on lazy Keto for about a month and a half just making small changes here and there. I'm finding it easier to ignore foods like pasta, but luckily now with your recipe, I can enjoy Keto pasta without having to spend a lot of money since I have all those ingredients on hand! 👨‍🍳👩‍🍳

    For those who have made this does the Xanthen gum make the noodles slimy. I shy away from XG because I find that's what happens.

    Can you do a video on road trip/picnic friendly
    keto snacks and meals? It would be great for summer to pack a cooler and be able to avoid the convenience store snacks. I love trail mix, jerky, and deli rolls, but I bet there is more out there! Watching this pasta video even made me think- low carb pasta salad!

    Joe, you are the man! You have inspired me to start eating ketogenic. Six months ago my A1C was 7.9 I just got my last lab results 2 days ago my A1C is 5.4 and I lost 40 lb in the past 6 months. I am a professionally trained chef but your keto recipes have inspired me. These are so much better than shirataki noodles and they are even better in my opinion than regular noodles I use these to make fettuccine alfredo keeps the carb count even lower thank you so much you have made a huge impact on my life

    Genius genius genius! 👏👏👏 Will definitely make this; spaghetti squash has met a superior noodle substitution! Does it taste like moz cheese? EDIT: Just went to the recipe on your website and found the answer, "yes, slightly." All the better!
    I notice you used packaged shredded cheese, which I've been avoiding because freshly shredded melts better, but in this case I see the benefits of using the packaged pre-shredded cheese. Yay!

    Hmmm---I think your tip of working the cheese and egg together with one bare hand and the spatula might help me when it comes to making fathead dough. That stuff has been a challenge for me, but now I believe I've figured out why.

    Does xanthan gum expire? I have some, but I’m pretty sure it’s at least 10 -15 years old. Seems like new, though.

    First, thanks for the wonderful recipes. I made the lemon bars, It was wonderful. As for the pasta, The dough came out very sticky and hard to work with. I put it in the freezer and finally managed to get something out. But it was hard and I do not know why.

      I recommend before hand that you spritz the parchment paper with a little bit of nonstick spray, parchment paper doesn’t usually stick to things, but occasionally it can happen :)

      That's cause functionally "pasta" is not keto able. Its all a simulacrum. Whether its th cheese based, the coconut flour, or almond flower.

      Try whole wheat thin spaghetti... Has lots of fiber that you can subtract from the Carbs...
      I have it once or twice a month and I've lost 35 lbs and counting...

      WoW....Tough crowd.,.
      I have totally changed my eating habits.....I am not calling it a diet... it's a way of life and it fits me perfectly.
      Moderation more vegetables and smarter choices. When I have pasta, it's a smaller portion with lots of other things in it... It's not the star...and NO.....
      There's nothing to cheat on and my Dr is very happy. The scale does not lie...down another 1 1/2 lbs

    Does that shredded cheese have corn starch in it?

      You appear aware that packed pre-shredded cheeses DO have "anti-caking" and mold inhibiting ingredients added to the cheese after shredding and before packing. Thus, you likely also know the only way to avoid is shred your own. Some keto recipe makers just prefer the convenience of the ready-to-go shreds. Your choice!

      @@FM19MONTH yeah I'm only pointing out that in hopes that he uses his own shredded cheese in future videos, otherwise it's misleading to those who think pre-shredded cheeses are keto. I'm pretty sure those "anti-caking" and mold inhibiting ingredients are pretty high on the GI scale

      Only thing for me, I never cared for -actually I won't eat - Al dented. So likely not a recipe for me 😭.

      @@FM19MONTH might be ok though since it's technically not actual pasta. The cheese may give it a slightly different texture. Also, if it wasn't all dente, it might clump together in a melted cheesy mess when the semi-hot sauce hits it. As it is, the sauce probably brings it to not quite al dente.

    Xanthan gum always tastes like nasty slime to me, no matter how I use it or what I put it in. Which is a real shame because not only do I have an entire bag of the stuff, there are a lot of good recipes I'd like to use it in. I will give this noodle recipe a try without it though and see how they turn out. Thanks JD.

The Keto Twins have a chaffle recipe where they use xantham gum so I am going to give that a go with the gelatin and see how that turns out as my first project LOL If that turns out well, the sky's the limit! 😁

    Do you think you could make some macaroni noodles like this also. I sure do miss macaroni casserole

      I don't think that would work, because as he says, the pasta must cook for only 1 minute, ("use a timer!") or it'll turn back into a ball of cheese. PLUS, what bugs me is any recipe, made primarily of cheese, like, say, pizza crust that you cook and then dump cheese on top - well, lets just say cheese on cheese, what's that?!?!

    I have seen one of two recipes that called fr the whole egg. I don't like wasting food. Is it ok to add the whites also?
