Fry chicken gravy | Red Sauce

INGREDIENTS
1 - 2 tbsps vegetable oil or oil from frying the chicken
1 small onion, diced
3 cloves garlic, sliced or diced
2 tsps diced or grated fresh ginger
Bell peppers, diced or julienne
1 large tomato, diced
1 cup or more water
1/4 cup or more Ketchup
6 or more pimento grains
Soy sauce
Bbq sauce
Jamaican Pickapeppa sauce
Brown sugar to taste
Allpurpose or chicken seasoning to taste
Black pepper
Slurry (equal parts room temp. water and flour or cornstarch) optional
Scallion
fresh thyme
