Ribeye Caps on the Jumbo Joe! Reversed Seared!

- My favorite part of the ribeye all tied up in the perfect package! Outstanding steak that is so easy!
• Started with the entire choice ribeye.
• Broke it down into 2 different parts, this cap for pinwheel steaks, the remainder for French dips.
• Rolled the cap into pinwheels, tied off with butchers’ twine and cut into steaks.
• Dry brined the caps 24 hours in advance, seasoned with our own rub with no salt or sugar.
• Set up the Jumbo Joe with the Slow N’ Sear basket and cooked them indirect.
• Once the steaks got to 80 we flipped them and at 110 we pulled them off and opened the vents until the coal were really hot for searing.
• Seared 1 minute per side two times and then let them rest.
Summary: These pinwheels were outstanding! My personal opinion is this is a nice cost savings doing your own breakdown of a whole ribeye. The salt brine and the seasoning we used was an excellent combo. This is my favorite part of the steak, so an excellent meal.

It was a good rub, but I would need help to get it just right. It is basically a lot of pepper, garlic, onion powder and cayenne. The issue was getting it stay mixed evenly because of the different size of each spice. Thanks as always! Cheers!

LOL! Costco used to carry the caps for $28 a pound, much cheaper to buy a choice Ribeye and make your own and use the rest for lots of other cooks! Always good to hear from you Dash! Cheers!

Great to hear from you Dave! We actually shot this one before I had the SNS Travel, but this is still a nice grill! I will always have this one because my daughter and son in law got this for me as a Christmas gift some years ago! My kettle I had before, I gave to my son in law when I got the SNS, so that Weber is still getting used and he loves doing steaks on that grill! Cheers!

That steak looked very tender when you were cutting it.
The cap is my favorite of all steaks and just like doing my own. It comes off of the whole ribeye pretty easy and I use the rest of the ribeye for lots of other cooks. Thanks Dave! Cheers!

Appreciate that! We have been using Firecups, they are a small US company. They are a little pricier, but really work well. I have also used tumbleweed from Amazon, depending on what I am doing. Cheers!
Nice cook! What do you prefer, the Weber Jumbo Joe or your SnS Travel Kettle?
The SNS Travel kettle is far superior with all of the additions, but you also pay for that as well! This was an older cook since we shot this right before the Travel Kettle came out. The temp control you have on the SNS is just easier to manage with the smoke hole and the handle on the top vent! Thanks for watching! Cheers!

Thanks Derrick! We have not done more with the rub, it was very good, but it separates a little between the different sizes of the spices. It was basically a lot of pepper, even amount of granulated garlic and granulates onion, plus cayenne for some heat. I will have to look up the rub you mention! SNS makes 2 rubs with no salt, but they do have some sugar, that is where I got the idea from, but wanted more pepper and heat. Cheers!
