      You're very fortunate in that your brick wall is the perfect height so you can make a little auxiliary roof from a sheet of plywood, you can toss up on top of it to protect the smoker if you want to smoke in the rain. Just make 2 legs to support the open end, where you stand. Be sure to get a nice, heavy duty cover for the smoker, though.

      Oh, are you now ever going to have some great meals and gain some weight! 🤣
      I weould suggest securing it somehow to the brick wall - it will be a prime item to get stolen. And take the flue off when you aren't using it - crooks will see it sticking up over the top of the wall and check to see what it is.
      Also, get a tarp to cover it with, or get a custom cover made for it - unless you oil it almost constantly, it WILL rust!

    As a person who has been smokin' meat for nearly 25 years, the tips I will offer are these... make what you like!! And yep... you might screw it up every now and then... but, if you enjoy the flavor, you'll enjoy the journey!

      100% Correct. I’ve sold 1,000’s of pounds myself here in middle Tennessee.
      It can be an EXTREMELY cocky and OCD triggering in the world of smoking and barbecue.
      😂😂😂 The HELL I use to catch because of the temp I run and my use of foil??? I’ve always ran a little hotter and faster because I was a one man operation feeding hundreds a day. And I’m a foil lover because I save as much drippings ( aka liquid gold) as I possibly can.

      Unfortunately it will happen. Especially with a new rig. There is a big learning curve. I can speak from experience being a trained chef, and using offset smokers for decades. I've screwed things up a time or two, and it could be as simple as not paying attention to the weather (temp/humidity)!😂😂😂😂 When it changes, you need to change your cook as well!👍 As you know, it's truly an art form getting it right.

    FYI.... A tip for cold or cool weather smoking. Get a welders blanket and put it over the cooking chamber during cooking. It will help regulate the internal temp better.

    2 tips.
    1 Put a coffee can over the stove pipe so it doesn't get rain in it.
    2 the hole by the stovepipe has threads in it so you can mount a temp gauge in it.

      I was thinking a screen on top of the stove pipe, so it would catch any embers. I can see a fly-a-way ember landing on a roof and burning down the complex.

    That cardboard box will make a great play house for your daughter. The wooden pallet will make a nice work table, just sheet one side with plywood and make the 4 legs with 4X4's. Give it all a good coat of paint and It will serve many purposes out side.

      I'd go with a couple coats of paint, and a polyurethane sealer, to protect it from the 191 days of rain, and all winter long. The advantage is that even if it gets scratched up, it can be quickly repaired with another coat of polyurethane (after sanding, of course).

      if it is standard width on the pallet, there are metal legs that you just clamp there. or table trestles around 10 pound
      each

      The best up-cycling advice right there for that pallette! Put wheels on the legs to move it around more easily, too! Can be work bench, or a work table for your pit when you're smoking something. Enjoy!

    Been using an offset for almost 40yrs. You’ll hear so many suggestions that you might become confused with all of the info. Here’s my advice 😉; learn how to build a fire and keep it burning. Don’t choke it and let it produce clean, almost clear smoke. The smoke can add perfect flavor or it can add a bitter, acrid flavor if you smolder your fire. The best way to learn is to cook on it. Be your own pit master !! Cheers! ❤ Oh,! and buy a quality cover for the pit. You don’t want it exposed to rain. 🤘🏼🤘🏼

      this is the most underrated comment. literally listen to every word he said and lastly you need to monitor this very frequently. My offset produced better flavor but my pellet smoker is set it and forget it.

    You need to invest in some kind of canvas roof/tent that sits considerably high over your outdoor kitchen/cooking area. So you can cook easier in the rain, but also simply so less water falls on the thing in the first place.
    Also hope you invested in a bunch of high quality wireless temp probes/thermometers.
    Aside from the traditional US BBQ meats.... don't hide from your Englishness. You have a MUCH better availability of high quality mutton than most of us, and can take advantage of that. Smoke some sheep!

      You are absolutely correct. A whole leg of lamb with a rub and lots of rosemary and thyme. Then, at the end, a mint jelly glaze or wash caramelized on it.

    Oh the money I would pay to sit on your front lawn with some sweet tea and watch the neighbors sniff the air trying to figure out where that beautiful smell is coming from. Here in small town America when you walk outside and smell that smell someone will definitely say "whelp someone is havin' BBQ".

    Pork Belly : score the fat side to 1 cm squares at a depth of about 3-4 mm, rub in a good rub mix, smoke about 220 for a few hours fat side down. Pretty simple

      Yes... neighbor complaints will not end with the first five or ten times. The solution is always "Make them join in." Pass out notices that you're smoking this weekend, and invite them to bring sausages, chicken, turkey, hams, pork ribs, etc. "Their enemy is THEM-!"

      @@balancedactguy I'm not so sure... he should have said, "Where do you plan on putting this smoker?" and THEN dumped the palette near but not ON the final resting place. Forcing them to nearly smash thru glass - or placing any palette with a palette's distance of glass is a terrible act by an inexperienced shipper.

    Mr.H is getting ready to have the best smelling back yard in his neighborhood. Use the wooden pallet to build an overhead cover for your smoker so that it won't matter if it is raining.

      Just be careful, some pallets have insecticides or other chemicals on them. There should be a stamp in them with a code. You can look it up and see if it's safe.

Pay from an employer is good, but to show your appreciation monetarily really expresses your appreciation like no other action.

      I agree, no doors were smashed, no people or cats were crushed ! The house didn't end up with a hole in it, the smoker didn't flip over on its side.

    I know the brand of the smoker is Franklin, but in the States, we had a comedy team of Franken and Davis. My vote for the name of your new smoker is Davis.
    If my memory is correct, the two (2) of you aren't the biggest fans of turkey, but if you can get a decent-sized turkey, smoke it, and you will be in love with the bird from that day forward.

    Start simple and smoke some chicken thighs. It's hard to mess up but you easilybuild confidence. Move on to pork loin, pork butt or shoulder and then ribs. Once comfortable with chicken and pork, then move on to beef brisket. Starting off simple helps you learn what your smoker does. What spot runs hot, what spot is cooler. How much wood to add to get to a certain temperature. How to drop the temperature. Do I spray down or baste, or should I wrap it with a liquid when it reaches a certain temperature.

    Tried to buy a Traeger from a family friend who wouldn't let me, and instead just gave it to me. Let's just say, every time I fire it up, the neighbors are looking to see what's going on haha. Beautiful thing about BBQ is you usually make too much for your family and get to share it with them. When they tried my ribs the last time, they told me it's the best if not one of the best ribs they have had in their lives. It's probably my 15-20th rack I've done as it's probably the easiest and most forgivable cut of meat you can do on there. I also recently did some New York strips in there for about 45 minutes, flipping the meat half way through, then reverse seering on a pan. Absolute perfection on the cook and it was honestly the best steak i've ever had that wasnt at a restaurant. And thats a freakin Walmart NY Strip lol. Cant wait to keep up with your guys progress! I mean I'm obsessed with mine now lmao.

    What woods do you have around you to use. Talk to people in your area that cut trees/limbs (thing power company, or tree trimming) and see what they cut the most. Some any tree that fruits or nuts can be used. and you will need to experiment with them and with different meats. I use a combo of hickory, Apple and red oak for beef and pork but use a combo of pecan, cherry and red oak for chicken and turkey.

    As someone that became a chef because of growing up watching my parents cook, I truly believe that Elana will be not only known as Chef Elana, but she will also have a great understanding of how to make delicious BBQ. Plus, the smoker is going to be hers one day.

    Congratulations! I have never actually done any smoking myself. But as an almost 70 yr old that has lived most of my life in Oklahoma, Texas and Missouri I have definitely enjoyed eating plenty of smoked meats/BBQ! To me, there is just something very primally satisfying about the aroma and flavor of smoked meat! Enjoy the Adventure!

    That is an amazing smoker!!!! Just remember the first time you tried riding a bicycle you didn't do it perfectly. It took time and several falls. Smoking meats is the same. It will take time and you will make some mistakes but if you learn from them you will be on your way to being a good smoker. I've been watching and loving your videos since your daughter was just a tiny little infant. Best wishes to you and your family. Looking forward to seeing what you cook on the smoker.

    Hopefully it came with the thermometer. You will definitely need that for sure. Also when lightening the chimney coal starter, put paper or whatever you're going to start it with, then light that and put the chimney on top of the lit paper. It's better and safer than trying to hold the chimney by hand. Once the coals get red hot then dump into fire box.

    A word of advice from a born and raised Texan smoking BBQ for years. Your fire box will appreciate and BENEFIT from a small fan approx 1 meter away pointed straight at the bottom of the coals. I have a pit near a wall and always had temperature issues until I added a small fan. Trust me you will see the difference in the quality of your smoke flavor!

    Holy crap! I just looked up the price of that metal beast and man-oh-man! You guys went all in! When I had a house we built a smoker out of a surplus metal legal shelf and a Webber kettle. One thing's for sure, your neighbors will be drooling when they smell that thing working!

    How about the "BIG TIN LIZZIE !! That thing is huge! This is going to be a fun journey to watch!! LOL
    Because you do have a bit of a lovely patio . . I would suggest you look into a cover to put over your patio stone and then roll the smoker onto it. They can usually be soaped up and hosed off - and will really help save your patio!! They do get messy!!

    I worked for a BBQ company that won the DC cookoff for many years. One bit of info that nobody really will give you is no matter what brand, style, shape, or price........EVERY smoker/ bbq grill has a personality. You will find there are areas in the smoker that get hotter and others dont. You will have to LEARN your smokers personality through trial and error. Do not give up. Keep trying different temps, placements, etc until you learn yours. Good luck from America!!!!!!!

    I love smoking meats. My dad taught me to do it when I was little and it's something I really enjoy the process of. It's definitely a labor of love.     You MUST smoke some brisket as well!! BTW..Try to get a COVER for that Smoker. Regardless of the Oil based Seasoning Technique...it is still a good idea to protect this Bad Boy from the elements as best you can!! Good Luck and Bon Appetit!     If you really want heat, don't put logs on the fire -- put kindling. Logs take a long time to burn. Good for cooking. But if you want high temperatures, a quick burn is what you want. As for pork bellies, you've got the curing salt, so you should make some bacon.
