The plancha - brilliant! Although I'm retired, I work part-time for a small family-owned backyard grill retailer/mercantile in south Texas. Why?... it's fun to see all the different cookers available today and the gads of technology that is coming to the backyard, but it's even better when I get to visit and talk with folks about their backyard cooking needs and dreams. My point: I'm not a pro, but I am in an environment that is all about backyard cookers and the whole backyard grilling scene. I get "first-dibs" on a lot of the new, neat "toys" for grill masters and pit masters. And this offset smoker, in Europe of all places? Awesome! Here's something for you folks in Europe, a notion started by a radio DJ in the US decades ago, Paul Harvey, who would tell fantastic tales and then add a fascinating connection the end. Harvey would close it out by saying, "And now you know the rest of the story." Looks good and I look forward to watching you cook with it. My two constructive criticisms are that you need a heavier counterweight for the main door and that using the firebox door to regulate the air is dangerous for any children around. It would be easy to fit a regulator that you can open and close.
Nice design. Comparing it to that of my Workhorse Pits unit, I would suggest only one change. Remove the lip at the bottom of the firebox door for much easier ash clean out.
Eastern side of Europe have very skillful blacksmith's and they are making many thing for bbq - like firepits, smokers, outside grills... I live in Norway and order some thing for fire cooking special order from Lithuania... It is funny to see that some people have something very close but they better go to order stuff from USA and they are so proud.. i don't think that the quality is a problem, I believe that USA makes good quality.. but I believe that in Europe you would get much better price. And cold/hot smoking has very deep traditions in eastern Europe, so they now what they are doing...
It's a beaut' . Can't go wrong with Cortens Steel. One question tho: how do you clean the burnt smoke wood from the fire-box? Is it just opening the "front" door and scooping it out, or is there some kind of "trap" door underneath.
Those wheels look great but might not be the best if you are pulling it across grass or gravel. A large inflatable tire option might be nice. The fold down chimney is a nice touch if you are planning to pull it into a garage or shed.

Good day, been watching you forever and the rec recipes that you come up with are crazy. I’ve tried many of them and I love it OK one moment on the kudos from me…. I am stuck in what I want to purchase. This is my dilemma. I have reviewed the Komada Joe and the green egg and I had an offset smoker years ago when they first came out… The Kamada, Joe and green egg seem to do just about the same thing, grill smoke, etc….. just not sure which is a better construction. And for the offset smoker, did you get this offset smoker because you wanted to fill that spot in your garage not having one or what is the real purpose for the offset smoker compared to the Kada Joe smoker. I would say the biggest advantage is this smokers size. With the Kamodos, you are limited in that regards. I have a Vision kamado grill and love it... got rid of my offset.
Cool that you built your own smoker, but I don't know why you are saying its the only real Texas offset smoker in Europe, you can get loads in the UK. You have priced yours at about the same price as the Workhorse 1975, the Franklin put and the Goldees pit. Not sure I like the plancha being where it is, where do you preheat your splits? Also, I dare say the temp at the middle and the left side of the cook chamber are significantly different so you might've been better off having 2 temp gauges.
I like the channel but the title of the video is very misleading as its not the only one, i built my own offset years ago and i live in Scotland, it wasn't the size of yours but it was made of two large gas bottles cut and welded together and was a "Texas style" offset smoker with many of the features of yours including the smoke flow arc across the grill.....I built it ten years ago, and a quick search shows me many commercial offset smokers for sale ?
why is there no vent on the firebox? Would it have been that complicated? And will the Vent have the numbers on it like you have it? Seams a little scetchy, would be nicer to have it completely blacked out.
The firebox doesn't need 2 vents, the door is a vent in itself. Because of the heavy build the door will stay in the position in which it has been set. A smaller vent in the door would restrict the airflow too much. The scale (numbers) are on the damper, aka the top vent in the chimney. You can order the smoker pre-seasoned, however it will never be fully black. The black coating you see on some smokers is actually for furnaces and are toxic. So we don't recommend that.

Very nice Beast. From pasted experience, I would build a fire rack in the fire box. In time, the bottom will burn out. Nothing is fire, Proof 🔥 .

Needs 2 more true temp thermometers. one in the center of the door and one near the fire box.
Otherwise, this is a great looking rig!
Love the flat top area on it with warming rack. Spend all day cooking a brisket or pork butt and you need a burger to hold you over.
