    Peppermint crisp trifle
    Serves 4- 6
    Total time: 45 minutes
    Ingredients:
    100g tennis biscuits
    1 tin caramel
    2 cups (500 ml) Ellis Brown Creamer
    ½ cup water
    3 bars, chopped Mint Chocolate
    Method:
    1. Break a Tennis biscuit in half
    2. Place the 2 halves into the base of 4 glasses/ jars
    3. Whisk 2 cups of Ellis Brown Creamer and ½ a cup of water until thickened and stiff peaks start to form
    4. Whisk the tinned caramel until smooth and set aside
    5. Fold the tinned caramel into the whipped creamer
    6. Spoon some of the mixture over the Tennis biscuits
    7. Sprinkle over 1 Tbsp of Mint Chocolate into each glass
    8. Repeat this process until the glasses/jars are filled
