Walk in cooler holds about 34 degrees while the rest of the trailer houses my band saw,grinder,slicer and such. Hot and cold smokers within 20'of the door... I havnt bought meat in a store for 25yrs. or more.👍👍👍

You made a great point about the things you carry in your pockets. I’ve gotten in the habit of carry about 8 -feet of cord in my pocket almost all the time. And you’re exactly right… you never really know when you’re gonna need a piece of string to bail you out. I always appreciate the effort that you put into making the videos on your channel. So thankful and grateful for what we were taught and my husband does know how to hunt, fish, raise, butcher and process many kinds of animals, fish and other aquatic types. Should the Lord tarry and things continue at this insane trajectory, we may be having to resort to those old ways of surviving.

We always skinned outside. Today would have been a frozen finger day working a deer. It's been a dozen years since I've skinned one, but I have done quite a few in my day. This video brings back good hunting memories shared with friends and relatives! Maybe there'll be a rocking chair on top of the head of the next one!

Glad you got your deer, Justin. It's everybody's preference but I don't care for the gamey taste. I'll take the steaks and soak them in ice to draw out the blood then I'll pound them tender and soak them in milk. Rolled in seasoned flour a couple times then deep fried there's nothing better. I grind the rib meat and scrap into hamburger and chili meat. Mixed with a little beef hamburger it doesn't shrink up in the pan like regular hamburger.
I pretty much do em the same way, except for the hams. I've always boned em out later. Might try it your way next time. Still bow season here. That heart makes fine fajitas
I do like to soak my deer meat 🥩 in cooler with ice , apple cider vinegar & salt ... I clean my meat with water hose put In cooler , cover with ice , salt and Lil brown vinegar and I let it age in cooler about 3 days or until the ice water is clear and no blood in it ... I drain the bloody water each day and freshen up the ice , salt and vinegar daily until the water is nice and clean/ clear ... this method draws all the blood out of the meat being the salt & vinegar & it does help with the overpowering gamey taste especially if u harvest a rutting buck or does in estrus ... just how I like to do it if you know what I mean vern 😅

I did get some good ideas that I may try the next time I process my deer or moose... breaking the legs down at the joints while it's hanging is smart... now that I'm getting old this will help... the frozen bottles also a great idea here in Southeast Canada used to be able to hang carcus in the garage for 2 weeks with no problem but the past couple years it's been getting too warm... again, thanks for sharing
Good job on the kill and processing. I have never seen one done like that but I will sure have to try doing the rump roast like that. We have gotten away from using a hackem saw and started using a pair of lopping shears for the ribs.

It was a awesome Christian thing to do, thanking our heavenly father for the gift he provided and thanking the deer for its sacrifice so that you and you family have provision for the cold months ahead.
Them hocks are the only thing we saw just because there is so much bone and so little meat... Fits in the crockpot a little easier lol. Other than that i do like a 1st cousin of this method lol. How do you keep the tallow from building up on your blade? Ive always just used 2 knifes so i can swap to a clean one. Ill probably send a message on FB and talk with you a bit more
Usually about a week and it depends on the outside temperature. If its cold enough a bottle will last a few days but i always change it the second day because the meat will have melted the ice. If its warm here which is normal ill swap them every day once a day
I know you like knives i have an old outdoor edge swingblade that the rubber handles have disintegrated. I emailed the company and asked them if they could send me new grips i can put them on . They told me they could not. Much to my shock they sent me a brand new knife with a better design point than my old one.

Most folks call the deer taste “gamey” and are not really referring to spoiled meat or mishandled meat . They soak in salt water to remove the good flavor i like and simply call it gamey because they herd that somewhere

Its been a tough year . I worked on projects plus it was too warm for me then. Ill get another maby 2 more before season is done

You age your meat the same way I do, I use plastic jugs frozen and swap them out with new ones when needed. I also eat the heart.
