Guys, I’m from Italy and believe me, this is a delicacy that is not as common as you’d think... people don’t go around making fresh pasta everyday, and they sure don’t know how to make it THAT good... most Italian recipes are made of just a few ingredients, and making them taste good is something that you can easily learn, but making them taste and look amazing is something else... Ciao tutti, As an Italian I can weigh in on this. The reason his family, the house of savoy, is exiled from Italy (why he is in America) has to do with fascism. After WW2, victor emmanuele was the king of Italy. He enabled Mussolini’s rise to power and appointed him and was made emperor of Italy’s conquered territories. As a result, after the war and the rightful death of Mussolini, he was subsequently exiled just 30 something days after passing the monarchy to his son Umberto. A republic of Italy was established and all descendants of the monarchy are exiled. So this guy is directly related to Umberto and as a result was exiled, as all males of the savoy line were. I believe the exile has been lifted but I suppose he chooses to live in America. So yeah, the reason this guy has a food truck is a direct result of the Italian monarchy’s complacencies in fascism. Basically what I’m saying is that his family is responsible for fascism and when the tide turned on the royals they fled without remorse, and now the other relatives live lives of indulgence without having worked for anything really. At least this guy is productive with his life... well, except for the time that he advocated for reestablishing the Italian monarchy through (ironically) electoralism

JP G have you never heard a Northern Italian or French accent before? He sounds French other than when he is saying Italian words. I think he sounds french because his royal family are from Savoia which included parts of Eastern france and he grew up in a French speaking country.
I see there’s understandably some confusion in the comments. I'm gonna try out his truck when Covid is over. The place that everybody raves about--Pasta Sisters--is right by my house. And it gets the raves as 'authentic.' But it makes carbonara with bacon, so I've only eaten there once because...bacon. The fact that he makes carbonara with guanciale is really significant. It made my ears perk up!
Couch yeah sometimes there is more than one way. But using guanciale is a pretty big deal though, hard to source. That’s some dedication to true Italian pasta
This reminds me of an Italian food truck in Austin TX. A married couple ran it, they barely spoke a word of English, I had to point at the menu to order. They handmade the pasta right there and it was by far the best pasta I've ever had, better than Little Italy in NYC. I tried in vain to find it again any time I'd visit Austin, but turns out they closed down not long after I had it.

They showed numerous pictures from his youth, on the slopes, etc. And he bemoans his plight of his families loss of royal status. He obviously doesn't have to do it: his family - despite not being the Kings anymore - still have lots of wealth and property in Europe (the family had estates and assets in many countries, including Switzerland and they are still related to many European royal and noble families). He is doing this food thing as something of a hobby, but he is clearly passionate about it.
Obviously he is smart enough to realize there was a need in the market and he fulfilled that need with amazing food. Genius gourmet pasta out of a food truck with imported Italian chefs.
His countrymen literally evicted his family out of Italy for so many years, he was raised in another country yet was always proud of the country and culture he was born in.

That looks way better than 90% of the “fresh pasta” I had I’ve had in Italy. We saw barilla pasta boxes stacked up in a few restaurant kitchens that claimed they made fresh homemade pasta

Ciao tutti, As an Italian I can weigh in on this. The reason his family, the house of savoy, is exiled from Italy (why he is in America) has to do with fascism. After WW2, victor emmanuele was the king of Italy. He enabled Mussolini’s rise to power and appointed him and was made emperor of Italy’s conquered territories. As a result, after the war and the rightful death of Mussolini, he was subsequently exiled just 30 something days after passing the monarchy to his son Umberto. A republic of Italy was established and all descendants of the monarchy are exiled. So this guy is directly related to Umberto and as a result was exiled, as all males of the savoy line were. I believe the exile has been lifted but I suppose he chooses to live in America. So yeah, the reason this guy has a food truck is a direct result of the Italian monarchy’s complacencies in fascism.
Basically what I’m saying is that his family is responsible for fascism and when the tide turned on the royals they fled without remorse, and now the other relatives live lives of indulgence without having worked for anything really. At least this guy is productive with his life... well, except for the time that he advocated for reestablishing the Italian monarchy through (ironically) electoralism

Then he discovered normal life and he challenged to live, then he appreciated simple things he missed for a long time and got in touch with his human being better. JP G have you never heard a Northern Italian or French accent before? He sounds French other than when he is saying Italian words. I think he sounds french because his royal family are from Savoia which included parts of Eastern france and he grew up in a French speaking country.

He’s not poor at all, he doesn’t live in Italy because his whole family (the Savoia, the same dynasty that united Italy in the 1800’s) has been exiled permanently after WW2.
He tries really hard to be more “accepted”, especially in Italy, since he’s family doesnt have a great reputation anymore, to say the least. But you can rest assured he’s not working on that truck xD nor dressing like that regularly

I'm gonna try out his truck when Covid is over. The place that everybody raves about--Pasta Sisters--is right by my house. And it gets the raves as 'authentic.' But it makes carbonara with bacon, so I've only eaten there once because...bacon. The fact that he makes carbonara with guanciale is really significant. It made my ears perk up!
Personally having made carbonara with guanciale, I prefer making it with pancetta. Guanciale is too fatty for my taste
one ingredient really shouldn't make that big of a difference dude, don't be a purist. sometimes there's more than one way to do something well.
Couch yeah sometimes there is more than one way. But using guanciale is a pretty big deal though, hard to source. That’s some dedication to true Italian pasta

This reminds me of an Italian food truck in Austin TX. A married couple ran it, they barely spoke a word of English, I had to point at the menu to order. They handmade the pasta right there and it was by far the best pasta I've ever had, better than Little Italy in NYC. I tried in vain to find it again any time I'd visit Austin, but turns out they closed down not long after I had it.
I keep coming back to this video whenever I remember it. The wisdom of this man is simply amazing.
I love how absolutely humble this man is and it's wonderful to see him bring what he thinks is the best of his country to us here.
