Authentic Italian porchetta is amazingly succulent and flavorful, and the way he soaks up the juice from the pork onto the ciabatta bread only then to top it with onion marmalade and arugula makes me want to fly out to to try that. Excellent job!
the humility he has really shows how classy he is, this is one bread I'll gladly pay without any regrets. heck i'll even pay him extra so he can offer some of those quality cuts to some poor or homeless who cant afford it try them out.
Totally legit food. The potatoes with all the dripping are amazing. You just need a little salt on that and that's it. The only downside is the lines are super long.

I live in Los Angeles, I have been to SF numerous times and EVERY time I've gone I have made time for the Porchetta sandwich. I haven't been in about 3 years and I miss it to this day! I would go to SF at this point just for that sandwich. It is amazing and to anyone going I highly suggest it! Also can't forget the potatoes!
His wife is super nice. Back in college when I used to work at the Japanese deli in the Ferry Building a little after Roli Roti first opened and they had just the one truck, she would often stop in when they were working the Saturday farmers market (she's Japanese and the deli sells legit Japanese salads and snacks that are everyday eats in Japan, but almost never found outside Japan unless you have a Japanese grocer or make it yourself). Sometimes we would do a trade but it was mostly going to each other's shops and exchanging pleasantries.
When he rubbed that bread all over the cutting board and the porchetta to get all its juices, holy cow. I'd eat that bread alone w/o anything, I'm okay w/ that.

Olá, em Portugal também comemos muito frango assado na brasa, porchetta não tanto porque não temos a influência italiana. O frango no Brasil vem com molho piri-piri ou é preparado de outra maneira?

Went their a couple years ago and can honestly say the porchetta is the best I’ve had.

Every block in Mexico has its own rotisserie , instead of porchetta they usually have pork ribs and yeah those potatoes that have been soaking all the juices that drip down are freaking insane jajaj

Thomas is a good business friend of mine...he is an outstanding human being, and 100% what you see here. Plus, everything he touches turns to gold...he was playing with bone broth made from his chicken bones, and that playing is now a multi million dollar business! You can buy it in supermarkets now.
