This recipe uses tapioca flour to give the waffles the chewy texture on the inside like the ones you can find at the Vietnamese Dessert Shops. Combined with the richness of coconut milk and pandan extract, this waffle has the most amazing taste and aroma. It’s a little crispy on the outside but just the right amount of soft and chewiness on the inside.
You can serve it as a snack with coffee or tea.
Ingredients
Tapioca flour - 300 gr (2 1/2 cups)
Rice flour- 100 gr (2/3 cup)
Sugar - 125 gr (2/3 cup)
Salt - 4 gr (1 tsp)
Baking powder - 4 gr (1 tsp)
Eggs - 3
Pandan extract- a few drops, adjust to desired (is using vanilla extract in place then use 1 tsp)
Milk - 80 ml (1/3 cup)
Coconut milk - 400 ml (1 2/3 cup)
Oil - 20 ml (4 tsp)
Coconut shreds - 1 cup
If you don’t have pandan extract then replace it with vanilla extract.

Anything that is pandan and coconut flavor is automatically delicious, in my book! :) Would like to see you make pandan and coconut xoi (sticky rice) along with other flavors and the peanut dip that goes with it. Kids and grownups love eating it.

I had skipped all that dry ingredients just used already made pancake batter 😂 I’m too lazy to do all those and go grocery store to buy ingredients. Still came out really good!!!

These waffles were definitely crispy, chewy with a bit of crunch of the grated coconut and the right about of sweetness for us 😋
My kids loved it even though my youngest kid prefer it without the grated coconut in it (I just strain the batter again for waffles without the coconut 😅)

Yes, overnight is fine. The batter might be a little thicker the next day. If so, add a little more coconut cream 🙂

Hey there! You say to use rice flour. Do you mean regular rice flour or something like Mochiko (Sweet rice flour)?
Also, do you mean coconut milk as in the drinkable kind from a carton or coconut cream (which usually comes in a can)?
Regular rice flour. Coconut cream like savoy brand. The creamy kind in the can.

You can make 8-11 waffles depending on the size of your waffle maker 🙂
If you're serious about cooking (specifically baking), you should buy a kitchen scale (only about $15-20). Grams and ounces are a little harder to convert into measurements like cups and spoons because different items weigh differently, so to have the most accurate outcome, a scale is necessary! (:

Yes, it’s a chewy texture recipe. If you want less chewiness, replace a little bit of tapioca flour with either pancake flour or corn starch. Equal amounts. 🙂

I actually did the rice flour measurements for the tapioca ... And the tapioca measurements for the rice flour... It came out perfect that way... Idk why when I did it the other way it came out more gelatin like??

You’re welcome. Thank you for the clarification. I understood it as you wanted to replace the tapioca flour with pancake flour lol 😂. It’s fine to add a little to balance out the chewiness (the rice flour is meant to do that). Will be a matter of preference. I would recommend trying the recipe as is first then tweak it with the next batch. 😉
@@AimeesCooking actually, I really liked the chewy but not hard textures. The rice flour gets stiffer when the amounts measured incorrect. That's why I thought it would be good idea to get a replacement. I tried similar recipes in the past. Once, the waffles are cool down. It gets real dry. I'll def try out your recipe to see the results. I can't wait to get my son involved.
