How To Make Crispy Waffle - Made with Breville Waffle Maker

  • The perfect waffle recipe for the right amount of crispness and fluffy-ness.
    In search for the best waffle recipe with the perfect crispness and fluffy-ness, after many tries of different recipes out there, I had finally found the perfect recipe to make the best crispy and fluffy waffle. Made with Breville Smart Waffle Maker.
    The secret to extra crispy and fluffy waffle, for every cup of general flour, reduce 1/4 cup of general flour, and replace with 1/4 cup of cornstarch.
    Crispy on the outside, fluffy on the inside. Classic.

    Recipe (yields 4-5 regular size waffle)
    Dry Ingredients
    3/4 cup (100g) general / all purpose flour
    1/4 cup (30g) cornstarch (key ingredient for the crispness)
    1 tablespoon sugar
    1/2 teaspoon baking powder
    1/4 teaspoon baking soda
    1/4 teaspoon sea salt
    Wet Ingredients
    1 cup (235ml) milk
    80g unsalted butter (melted) - This is the correct amount of butter. In the video I mistakenly stated 70g of butter.
    1 large egg
    1 teaspoon vanilla extract
    Instructions
    1) Whisk the flour, cornstarch, sugar, baking powder, baking soda, and sea salt in a mixing bowl.
    2) In a separate bowl, whisk the milk, melted butter, egg, and vanilla extract.
    3) Add the wet ingredient mixture to the dry ingredient bowl and combine it well. Do not over mix.
    4) Let the batter set aside for 10 minutes, so that the baking powder can be fully activated. At the same time, preheat the waffle iron.
    5) Once heated, pour the batter into waffle iron and follow it's instruction for done indication.

    Bravo.... I almost never leave comments, but as a waffle snob who only likes light crispy waffles, well done. Good job on the close up shots showing the how crispy they are and how slowly you cut into the waffle. Most waffle experts done have a clue.

    I bought this small wafer maker, very small, $6 with discount from Macys to fit in out kitchen, as we don’t eat waffle so often. Thought to make some for my toddler.
    Initially no recipe worked to make crisp waffles and I was disappointed, but kept it.
    Today I decided to give it another try, and wow, it worked. This is an amazing recipe. Even when I modified it and instead of a tablespoon of sugar added 3/4 banana and decreased the milk to 3/4 cup, the waffles came out crisp outside. I believe with this huge heavy-duty waffle maker this recipe would come out much better even.
    ❤ this recipe. Will use often.

    It is worth noting that using a detergent cleaner on a waffle plate is never recommended ua-cam.com/users/postUgkxUfphIgghPSpAXNq6OG2WRYsFVqylcqMn though people who don't understand about kitchen hygiene won't understand that a stiff brush is all that is necessary to clean the inside of the unit. Let it cool slightly but still perform the cleaning while it's warm. I used to have a Black and Decker unit that I just loved, and was concerned when we had to replace it that I might not find one that I like just as much. This one does it for me.

      @@NotATechGuy Yes! I've made 3 times for this recipe since I discovered your recipe (1 time/day) with some modifications. Unfortunately, I faced some problems haha.
      1st time - followed the recipe - the waffle came out a little bit soft (crispy at some edges)
      2nd time - reduced the milk ratio (superbly crispy but the interior is too dry unfortunately)
      3rd time - increased back the milk ratio but reduced the oil (turned out to have an average waffle with no much crispiness/inside is quite dry too haha)
      Am going to try my 4th time tmr using your recipe, I wonder how does your waffle taste like in the inside? It is dry or moist? Thanks bro!

    One of the better videos on waffle making. Well done. They looked perfectly cooked, nice colour and crispness and soft on the inside. True to Breville’s claims.
    There are so many videos on this subject on UA-cam made by people who are absolutely clueless. If any thing, they put you off buying one.

      Hello! Nice purchase! :)
      I always prepare a dedicated microfibre cloth (from 3M) for cleaning this beauty.
      After cooking, let the iron cool down, then damp the cloth with water only, fold the cloth twice or thrice (to have a good thickness), then use a butter knife to guide the cloth to clean the rows and columns of the waffle iron.

    Hi can I ask if you know what can be used to substitute baking powder? I tried to look up substitutes, but I think the only possibly relevant items I have in my kitchen are baking soda, plain yoghurt and balsamic vinegar!

      Hello, I have never tried a substitute for baking powder. But upon searching online, I think you can try combining 1/4 teaspoon of baking soda + 1/2 teaspoon of yogurt to replace the baking powder.

    Can i make the batter beforehand? Will it be okay to leave the batter overnight? Or maybe 3-4 hours? Will the result still be crispy and fluffy or it will affect the texture? If we can premake the batter what's the maximum time we should keep it?

      Absolutely! Maximum lead time to prepare the batter is 24 hours. I sometimes have leftover of the batter and kept it overnight at fridge. Then it’s still good to go on the next day.

      Hello, if the ingredients were the same amount as the recipe, then I suspect your waffle maker might not be hot enough.
      Ideally the surface of the waffle maker should hit 180 degree Celsius, if you have any temperature gun to measure the surface?

      Hello, it will be the same amount of oil which is 80g.
      If u measure in cup for butter/oil, that would be 1/3 cup

    Hi, do you know if your recipe stays crunchy even after the waffle is cooked and stays on the counter for 2-3 hours? I want to use it to make a waffle ice cream cone but cant find a recipe that keeps it very crispy for a long time. thanks for your help

      Hello, unfortunately my recipe won’t stay crunchy for 2-3 hours.
      It will stay crunchy for around 15minutes max and then it will start to be soft.
      I don’t think this recipe is suitable for waffle ice cream cone. Sorry :(

    I love this recipe but the better is a little too thin. If i go up to a full cup of flour to thicken the batter should I also go up to 1/2 cup of cornstarch? And do I need to adjust to adjust any of the other dry ingredients?

      For a full cup of flour, you should adjust to around 1.5/4 cup of cornstarch. But I know it’s hard to measure that, so it’s fine to go up to 1/2 cup of cornstarch.
      Anyway, the batter supposed to be thin. If you preferred it to be thicker, you can put it into the fridge for few hours and it will be thicker.

      @@NotATechGuy I've tried this recipe a few times and I can't quite get the exact crispyness all the way through like you do. I think I'm over mixing the batter too much when I combine the wet and dry. I'm not seeing the same bubbles form in the batter when you pour into the waffle maker and it's coming out nott as fluffy on the inside.

      @@sh09un1 I see. Yea, try not to over mixing it. Sometimes a little lump of flour in the batter is fine. And remember let the batter rest for 10mins before using it.

      @@NotATechGuy I need it to be thick because of my waffle maker. It's a 7 inch round, if it's too thin it doesn't fill every crevice even if I cover the whole plate. Which means not every part is touching the plate to cook properly so parts of it comes out flat or hollow.
      I cook for 10+ min but I know that's not normal. i'm forced to take it out before it's done in the middle or else the surface burns.

      @@sh09un1 I see. Yea, then try increase the flour only. To 1 cup flour and 0.5 cup cornstarch.
      Cooking time wise, 10mins is definitely too long. Try 5-6mins

      Hello, yes you can. The difference shouldn’t be that significant. In some countries, cornflour is equivalent to cornstarch.

      Hello, yes you can make the batter the night before, but it won’t make any difference in the taste/texture.
      And also do take note that don’t keep the batter for more than 2 days. It might go bad.

      Dry Ingredients
      3/4 cup (100g) general / all purpose flour
      1/4 cup (30g) cornstarch (key ingredient for the crispness)
      1 tablespoon sugar
      1/2 teaspoon baking powder
      1/4 teaspoon baking soda
      1/4 teaspoon sea salt
      Wet Ingredients
      1 cup (235ml) milk
      80g unsalted butter (melted)
      1 large egg
      1 teaspoon vanilla extract
      That's really weird given that you have the same machine.
      By the way, just to clarify, did you left the waffle out for too long? Because it will lose crispiness after like 5 minutes when it came into contact with air.

    80g oil is it the waffle taste oily? Is it can cut down abit without affect the crispiness?

      So far I haven't got any feedback from my test eaters about the waffle being oily. I have only seen patches of oil in the waffle iron after it's done cooking the waffle.
      Anyway, I think cutting down the butter to 70g should not affect the crispiness.

      Hello. I do not recommend pudding powder. If you don’t t have cornstarch, you can consider replacing it with corn flour. Or even just replace it with normal flour.
