How To - Pork Belly On The Weber Go Anywhere With Perfect Crackling - Argentinian Asado Style

  • In this video I show you how I cook pork belly with perfect crackling on the Weber Go Anywhere. I use a grill basket wedged between the base and the lid to create an Argentinian Asado style cook (don't bite my head off....I use the term "Asado style" loosely).
    Pat dry the pork belly, score the fat side and apply a generous amount of salt. Refrigerate and leave for a least a couple of hours. Remove from the fridge and pat dry once more. Apply some more salt before fitting into grill basket.
    Move the coals to one end of the Weber Go Anywhere and wedge the grill basket in the other end. Be sure its in there nice and tight. I started with the fat side out and rotated it once. Keep a close eye on the crackling. It can go from perfect to burnt very quickly.
    The whole cook took about 1 hour and 15min. This will vary depending in the thickness of the meat. Internal temps should reach at least 145 Fahrenheit.

    Excellent variation on using the go anywhere. Would it help clean up if you put some fatsorb in the bottom of the Weber to catch the dripping?
