    THANK YOU! My kids LOVES this stuff and I've been wondering how to make it and mines was NASTY! So, I applaud you for helping African Americans an all ethnicity on how to make this. Thanks again.

    This is similar to how I make it......I've used white corn & yellow I can't tell much difference, but I actually prefer yellow. I add corn to skillet with butter, cook on high just until it gets a little blackened to give that roasted flavor. Instead of Tajin I use chili powder, garlic powder and smoked paprika, about equal quantities. That smoked paprika really gives it an edge. I just use parmesan instead of cotija, it tastes about the same. I use extra spicy Valentina....black label. I'm telling you this combo it's the bomb.

    Try instead of can corn, try frozen organic corn. Tastes really good! Like straight from the cob.

      It needs the juice that’s what makes it all come together that’s why I don’t drain it or use from the cob or anything like that

    Thanks so much for this recipe. I tried to make this before but it came out not as good as I remember from the taqueria lol. I never thought to put the butter in it while it was boiling & I used frozen corn ugh. I added habenero hot sauce with Valentino since I like mines spicy & it came out soooo good!

      I know right - if I could but one of those little stands and park it out front of my house id sell all weekend - Raspas - corn in the cup - snow cones - variety of chips with cheese - diff. Drinks - hot dogs! Cool idea right

      The red bottle is a Mexican condiment sauce called Valentina! It’s so good u can find at Walmart in the Mexican ingredient aisle

      You could but it honestly helps it mesh all together. I tried it the other day without the liquid and it was just too dry in my opinion, but try it maybe it won’t make a diff. To you. :)

Honestly the mayonnaise is just to make it creamy. Maybe if u like sour cream experiment. Lol I can say the Mayo is not something u taste once it’s mixed with everything else.     Looks good but please remember that is NOT juice but canning liquid. Drain & rinse instead of using that "juice".

      Canning liquid is either water or juice … depending on what’s in the can .. and if vegetables are canned with water the water does in fact become .. JUICE

    Add blended elote flavored Cheetos and add to the top, it really brought this crunchy element to it and it was soooo good

    after the corn shortage, I was considering canned corn.
    but you didn't explicitly say that you drained the corn! I normally just use mayo, butter, lime juice (lemon works too) and crushed red pepper... but since I'm working with a different kind of corn, tips abt using the canned corn would've been helpful!

    Lime mayo and no tajin. Yajin and chamoy are used for fruits and vegetables if you like it that way its all good. But most elotes do not put tajin on it. Its lime mayo, cotija and Valentina thats it
