  • Lee's Legendary Pineapple Upside Down Cake
    Ingredients:
    1 stick of butter
    3/4 - 1 cup brown sugar
    1 can pineapple slices or chunks, drained (save liquid to contribute to cake mixture)
    maraschino cherries (optional)
    1 box yellow cake mix
    1 1/2 cups liquid (pineapple juice and a choice of lemonade, sprite, 7-up, or water)
    1 tsp. vanilla extract
    Directions:
    Line a 12" camp oven with parchment paper for ease of clean up and flipping of the cake.
    Chop up butter and place in heated oven.
    While butter is melting add brown sugar, stir until mixture is even.
    Place pineapple as desired, add cherries, if used and remove oven from heat.
    Dump cake mix into a mixing bowl, along with liquid, vanilla and stir mixture.
    Pour mixture over pineapple mixture and place lid on oven.
    Place 9-10 coals under oven and 15 coals on lid.
    Bake 35-45 minutes, until cake is springy to the touch.
    With lid raised, lift cake to the top of the oven, by holding the parchment paper, with the help of friends.
    Place lid back onto oven, so parchment paper doesn't slip and invert oven, while wearing leather gloves.
    Remove oven base and parchment paper and allow to cool a bit before serving.

    I had been asked to make a pineapple upside down cake for a family Christmas party. I had made dozens of them in the past and they had been enjoyed by all. I don't know if the oven was having a bad day but it wouldn't get done. I was impatient as I don't do late. I finally pulled out a clean toothpick. I grabbed the cake platter and flipped it over. As the melted butter and brown sugar mixture was running down my arm, I figured out why you are supposed to let it set for a few minutes. As I ran to turn on the cold water for my arm, I was proud that I didn't drop the cake. My wife walked in and said, "Doesn't that hurt?" She would have turned 68 last Christmas.

    That’s the best upside down pineapple cake I’ve ever seen. That’ what’s so good about cooking with cast iron. When you know how to use it properly, it brings out the earthiness and beauty of a dish.

    I would suggest adding a cup of chopped walnut to the brown sugar and butter mixture before adding the pineapple slices and cherries. My wife makes hers in a 10” cast iron skillet in the oven.

    that cake looked so delicious, one would never think it was made out in the wild. I am going to try this in my cast iron stove. GOOD GOOD JOB 😄

      We have friends who make OCIC items for our personal use like hats, aprons, etc. but nothing yet for sale to the public. We'll keep you in mind if we do decide to make up something for our fans with a logo of ours.

    Looks delicious. Most cake mixes call for eggs, is this not really necessary? I'm new to cast iron and cooking outside, so just curious and learning. I want to try this. Thanks.

    question... could you cook the cake in the lid... then just use a plate to turn it over?

      Only if you had an extremely high/big lip on the lid as the batter would probably seep over the edges. Just saying,Phillip, as it is cake batter and most lids are pretty low on the sides.

    This guy uses all imitation ingredients? Not Legendary?? Your kidding. Box cake mix? If your going to use parchment paper you might as well used something else to cook in like a pot. I mean the whole idea of cast iron cooking is to use the seasoned cast iron oven. The result of crustyness the cast iron delivers and real ingredients like flower etc. The man used lemonade because he didn't have enough pineapple juice?? I mean a cake is a cake and it was probably very delicious. But my point being this is not real cast iron cooking by no means. Sorry NO disrespect just my personal opinion.

      And you are entitled to your personal opinion and methods/thoughts of cast iron cooking. We enjoy Lee's recipe and know others who do as well, especially those just starting out.
