there are different types of bakes, what you're thinking of are called floats... they're prepared in such a way and with slightly different ingredients to allow for the hallow fluffy texture.
If you want it to have less dough you have to roll it out very flat then the inside will puff so you can stuff. That's the secret. Some people like them heavy it's a preference.

Nice. When I make this I use hand mixer to make the dough, I make sure my dough is sticky(soft) and the bakes come out soft

The butter I used is soft, I had kept it in the fridge and measured it from there. It is 56.7 grams.
