I often cook for my elderly parents and use many of Nikki’s recipes. They really enjoyed this last night and didn’t need any additional sides. I really like that every recipe I have created from this site has been super yummy but also worked exactly as planed without needing any adjustments. Really awesome stuff. (Australia)

Made this tonight for friends who are visiting with their two children age 4 and 8. They all absolutely loved it with the 4 year old saying it was the best chicken ever!! All that was left on plates was the lemon slices! Will definitely make this again :D

You've never steered me wrong before but this one is going to be a challenge. In my area we have Mexican chorizo, Salvadoran and Filipino. Spanish is hard to come by. I'll have to substitute with another cured sausage.

I don't know what I did wrong but I ended up with a mushy watery mesh. It still tasted nice but I'd like another go at doing it right. The only part of the recipe I changed was using 4 thighs instead of 6 because there is only 2 of us. Left everything else the same. The only difference in cooking was I used my 24cm dutch oven (casserole dish) which is deeper than this one. I go with 1 cup rice to 1.5 water when cooking rice normally. 900ml seemed like a lot of stock, it just didnt get absorbed? Can someone shed some light? 😂
Made this for dinner and I realised the chicken stock was WAY TOO MUCH compared to the amount of rice but it was too late I already added it then my dish turned out SOUPY and weird I had to strain and air fry the rice so the water dried up ( baking it did nothing ) and yea that's how it went .....took forever to make ( even tho I'm generally rly patient when it comes to cooking) by the time it was ready to serve I didnt even feel like eating anymore :( it's too bad cuz I rly thought this was gonna be a good dish
If that’s the case just add a little more rice or add a peeled cubed potato to absorb all that moisture.... I like the idea of one pot meals. It’s a great recipe
Yes a big misprint there about the ratio of rice to stock. Usual ratio is one cup rice to two cups of stock. So I think it should have been two and three quarter cups of stock instead of three and three quarter cups.

Delicious! The only thing I did different was substituted Andouille sausage for Chorizo. Will make it again.
