Spanish Chicken & Dirty Rice | Easy One Pot Cooking Perfection!

  • Juicy chicken, spicy chorizo and tender vegetables nestled in a bed of seasoned delicious rice.
    This Spanish Chicken is all cooked in one pan, with the oven doing most of the work.
    A fantastic family dinner that you can put the table and let everyone dig in.

    Oven Temp: 170C/325F
    Ingredients for the Spanish Chicken:
    ¼ tsp salt
    ¼ tsp garlic salt
    ¼ tsp black pepper
    ¼ tsp white pepper
    1 tsp paprika
    6 chicken thighs (bone-in, skin on)
    1 tbsp vegetable oil
    Dirty Rice:
    1 onion finely chopped
    2 sticks of celery finely chopped
    1 red bell pepper sliced into strips
    100 g (3.5 oz) chorizo , sliced into half-moons
    1 tsp oregano
    2 cloves garlic minced
    2 tbsp tomato puree
    250 g (1 cup) basmati rice
    4 tbsp (60ml) white wine
    900 ml (3 + 3/4 cups) hot chicken stock
    10 cherry (grape) tomatoes sliced in half
    1 lemon sliced into half moons
    To serve:
    1 tbsp chopped fresh parsley

      I’ve been in the restaurants business for over 49 years. Never saw a chicken Francais in a brown sauce. Sorry. I’m from nyc and as far as we see and know it’s lemon, butter, and white wine. Bye TT444FF 7th

    I often cook for my elderly parents and use many of Nikki’s recipes. They really enjoyed this last night and didn’t need any additional sides. I really like that every recipe I have created from this site has been super yummy but also worked exactly as planed without needing any adjustments. Really awesome stuff. (Australia)

    Made this tonight for friends who are visiting with their two children age 4 and 8. They all absolutely loved it with the 4 year old saying it was the best chicken ever!! All that was left on plates was the lemon slices! Will definitely make this again :D

    My wife makes much the same, but, she adds split green olives, red kidney beans and fresh green chili to it. It just enhances an already tasty dish.
    Oh, and it goes a lot further!

    Great videos. I made this first time yesterday for guests. Looked exactly like the video when done. I did adjust the water down from 3 3/4 cups to 2 cups as the rice calls for. Perfect. 3 3/4 cups would have been way too much.

    Afternoon Nicki, this might be 2 years old, but the dish looks as fresh as the New Year 2023, a very happy and prosperous year to you and the family.       @@annydobon8106 Yes, that's LE CREUSET, but I prefer STAUB - a little cheaper and better to handle (black inside, not white) and very good quality

    You've never steered me wrong before but this one is going to be a challenge. In my area we have Mexican chorizo, Salvadoran and Filipino. Spanish is hard to come by. I'll have to substitute with another cured sausage.

      Should be fine yeah. Just put it on a medium low heat with the lid on, on the hob

    I don't know what I did wrong but I ended up with a mushy watery mesh. It still tasted nice but I'd like another go at doing it right.
    The only part of the recipe I changed was using 4 thighs instead of 6 because there is only 2 of us.
    Left everything else the same.
    The only difference in cooking was I used my 24cm dutch oven (casserole dish) which is deeper than this one.
    I go with 1 cup rice to 1.5 water when cooking rice normally. 900ml seemed like a lot of stock, it just didnt get absorbed?
    Can someone shed some light? 😂
