Awesome cook. In Brazil we often use the “three vein technique” to identify genuine picanha, which is you flip to the size to the opposite size of the fat , and check the presence of three distinct veins in the meat. On this way you will be able to identify if you're getting a genuine piece.

How crazy, my birthday was Wednesday and for the first time I went to a Brazilian Steakhouse called Fogo de Chao. The Picanha was amazing!! My first time trying it as well, what are the odds you drop this vid 2 days later?

We’re lucky here in New Orleans to have a Forgo de Chao. Brazilian steakhouse experience is the best! Thankfully Picanha is getting easy to buy for our home cooks.

You did an amazing job, that looks incredible! One minor note: we use coarse salt, not flaky. It's meant to be put on right before going on the fire, no rest, and it will kind of create a little crust on the outside and an amazing crispy sear. Then you beat it a little to drop the excess salt before serving.

Hey Sam, Great Recipe! I've found that with Charcoal, it's best to divide the Grille into a Hot and Cool Zone, just like you taught me with the Flat Top! Especially with Wagu !

This "sear, shave, repeat" method is amazing for the results. It works a bit better with a cooking grill that can reach very high temp.
That looks so good. Folded and skewered, like the top sirloin of legit Santa Maria Style. The rotisserie sounds like a vertical, or a trompa. If I can find picanha here gonna try it...
