I would fly in PE on my incoming AF flight to HKG next week, but the gap between Economy and PE was incredibly high. More than 1.400 EUR. So, this time, I bought a seat with bigger legroom and that's all. Tks for you nice video.

Because more often than not airplanes have to follow airways that used to be defined by VORs (radio-navigation aids on the ground). Those airways aren’t always straight as you progress from one VOR to the next one. The GPS allows you to follow the great-circle route, which is a straight line, and flight planning can build a « random route » accordingly. This is frequent during oceanic crossings with few/no airways available for use. With that said, airlines usually prefer the most economical route, taking into account the resulting fuel burn (greatly impacted by winds aloft) but also overflying fees charged by the nations on the said route. Another factor is the geopolitical situation with ever increasing restrictions on which countries/zones can be overflown or not. For example, most western airlines are banned from oveflying Russia, resulting in increased distance/flight time to be flown, precisely between Europe and Southeast Asia.
adding on - about 85% of Chinese airspace is restricted to military activity only, which means that aircraft have to take fairly erratic/less efficient paths, which can be seen in the last part of the flight path shown in the video
