The earliest mentions of lemonade, which was lemon juice mixed with sugar to make it more palatable, were prescribed as medicine to treat the flu, headaches and stomach aches as early as the 10th century in Egypt. However, by the 1600s lemonade began to be served as an enjoyable drink for both the ill and the healthy in France and England. Step forward to 1700s and now lemonade was wholly enjoyed non medically as a street beverage. Lemonade was sold by street vendors, some of whom had stands while others walked around with barrels strapped to their back filled with the sweet drink. France especially went crazy for lemonade with lemonade street sellers being a usual site on the streets of Paris from the 1750s and beyond. This was NOT a drink reserved for the wealthy. Those of the middling class, which we may now describe as the middle class, were able to enjoy the beverage. Citrus fruits would have been a luxurious novelty to those who were very poor, however. Lemonades of the time were often mixed with eggs, spices and sometimes even sherry. The first reference to carbonated lemonade is from 1833 London. By the 1800s lemons, and other citrus fruits, could have been acquired in France, England the United States through water travel. The same is the case today. Lemons do not grow in Missouri even in 2024, where I live. Therefor, they must be grown elsewhere and shipped up to be sold in markets. I was surprised to learn from an orange farmer that it is common practice to pick citrus fruits up to 6 months before they even make their way to a grocery store.
Make this lemonade recipe at home! It's actually...good? 😲Really, I was surprised. You can't taste the eggs at all and they only serve to thicken the drink. This is lemonade just with more protein!
Lemonade, The Cook's Own Book (1832, Boston)
1 gallon of water
1.5 cups of sugar
3 lemons
3 oranges
3 whole cloves
1 tsp of ground cinnamon
6 egg whites + 1 yolk, whisked
A jelly strainer OR cheesecloth
Zest & then juice the oranges and lemons. Add the zest to 1 gallon of water along with the juice, sugar, cloves, cinnamon and whisked eggs. Stir up well in a stockpot. Place the top over medium high heat & bring to a boil, stirring all the while. Once boiling reduce to a simmer and simmer for 10 minutes. Be sure to stir frequently. After 10 minutes remove from your heat. Carefully pour though a jelly strainer OR 2 layers of cheesecloth. Place in a cold place to cool till chilled. Enjoy!
I am intrigued and will try it for the 4th for my family. I love your grater. Thank you for showing how it was done.
cloves of what/
Cinnamon and Nutmeg?
No. 😐
@@darlenekoykar4820cloves, the spice.
Loved the history and will be making it!
I'll be honest. I think I enjoy seeing the original kitchenware and gadgets more than the actual cooking. I'm a shameless collector myself.
oh I so agree
Im sure a metal whisk is better than the wood one (even thou Europe had more advanced stuff seemingly than these vids? Or the vids are meant to show how poor ppl did stuff only
They also had ovens in 1815 soo
I'm the same. The crockery makes me so jealous. I'm an addict.
Looks so good! Is there a trick to keeping it so tender? 🤩🥩
Interesting. I have never seen a lemonade that includes an egg yolk. The result: It looks delicious, and the smell of the lemons and oranges must be amazing.
Thank you, Justine, for the recipe.
I love the beautiful lemon yellow dress ! So gracefully adorable
Very authentic to the times.... There isn't an IRS Agent at the window trying to extort a share of Justine's Lemonade Sales...
Shhhhh
Kind of. UA-cam monetization gets taxes taken out. The government man doesn't even have to do period correct dress.
Always gotta be someone in any comments. Talking about things that don't have anything to do with the delightful video.
Yeah, how dare anyone actually implement article 8, section 1 of the US constitution.
@1790Abigail you too. Just can't enjoy the delightful video. Is ANYONE in the video bringing that up??? NO. Gotta have 👍🏽 huh??
Now that’s a “zester”! Love the bird songs in the background. 😊
What a beautiful dress and apron…perfect color for making lemonade! 🤗
Hi Justine I will definitely be trying this out especially in this hot weather. Also I just want to say I am so glad I found your channel because you and Ron are doing a great job of keeping all the great values of old America 🇺🇸 Histoy will never be forgotten with people like you. God bless from Lori 🏴🌼🌻🍋🍋🍋🍋🥤 ps love the dress 💛
Even in blistering heat you look so happy. Love this channel
Thank you! Despite feeling sometimes like I am working in a steel plant [122 F] it's really fun work.
Wow now THAT is a grater! It's huge! It'd be interesting to see a cleaning up video sometime, even if it's not all 1800s methods.
Same, I often wonder how they clean all these dishes!
Agreed!
My grandmother used to make this citrus drink in the summer. It was a mix of lemons, limes, oranges, and several other citrus fruits. It was exquisite. Sadly, I never asked her the recipe for it before she passed. I have struggled for years to recreate it, but have always failed. I can't get the mix of fruits or the ratios of them ever correct.
I’m new to your channel, I watch a lot of old western movies, I’ve always been so fascinated with how ppl lived & survived in the 1800’s. To find a channel on YT thay pays homage to that time is amazing for me. Thank you for the time you and your husband spend on educating us. I love your recipes as well, I will attempt to make lemonade 🍋in this manner. I bet yours taste 👅 delicious. ❤
Mrs. Rayfield's Old-Fashioned Lemonade Stand...Perfect for a hot summer day. Still, egg in lemonade throws me, but I will try the recipe. Now, all I need are lemons and oranges.
No eggs in mine! Lol
If you ever had an Orange Julius at the mall, that had egg.
@@sandramays795 I had no idea...wow.
@@seasonsofphilly1993 Yeah, the egg whites are what makes them frothy and creamy 😊
0:55 - that one serious Zester!!!
FOR REAL! That thing is huge!
It made me chuckle. Where does one store that thing?
Ron and Justine never disappoint! She always looks lovely, the filming is wonderful and so entertaining..showing a life so long ago. Much love from Oregon ❤
Step one: have life give you lemons.
Step two: make lemonade.
Step three: live happily ever after
53 yrs later!! Lol... my old boyfriend told my current boyfriend that I was a lemon, he was wanting me back, my new boyfriend said I'll just squeeze her and make lemon aid!! He's still squeezing me!!😂😅😊🎉
Might want to see about getting bars for your drive thru - did you see the size of that ruffian, that got lemonade.
I just ❤ this channel . I would love to go back to times before internet .
A lemonade with protein, it was like the protein drink of the 18th century Cool 😊
That was very informative. Thank you.
The recipe looks as if it could double as a dessert by adding cornstarch and cooking a bit to make some type of custard.
I figured Justine would have traded a kiss for the $1 😂 she’s a shrewd business woman. LOL
1 cent 😊
I so enjoy your cooking videos...always learning something. The breakfast you made a few videos back with the sausage and eggs...I made that and it was great! Thanks for the ideas. This lemonade looks wonderful, but with eggs costing between $5,00 and $6.00 a dozen, I won't be making this right now. If only I had my own chickens! Have a blessed day, and thanks for all you do.
Wow! I love that grader. It looks much easier to use than the northern day contraptions. Although, I wouldn’t want to scrap my fingers on that!
You guys are awesome Thank you for taking us back in time and showing us how things were done back then. LOVE IT❤❤❤
I bet it feels like Hades in there!! Lemonade is my favourite in the warm months! I have Simply Lemonade pink and lemon right now in the fridge. Pink in my cup right now....
Love your lemonade stand sign, get that $$$!!!🎉🎉🎉
Looks delightful and you look so summertime pretty in that yellow, Justine! Love your cabin decor as well. So homey. Be blessed, Rayfields! xoxo
The lemonade looks delicious, and 😢 you seem to be melting like a lit candle. In my early twenties, I worked outside in Jefferson City on a hot triple-digit day. I started to feel like the blood vessels in my head were going to pound my brain right out of my head. I know you and Ron exercise good judgment to the best of your ability and circumstances, but please add a dash of caution. 🥵
People sweat. That's reality.
Heat exhaustion is a bitch!! I’ve gotten it a few times. But, I’m sure they are smart enough to know their limits ❤
My girls and I love watching this channel. We live off grid in Vermont without electricy and we have a rainwater catch system. We do many of the things you are doing. Our house also looks similar. Thank you for these videos. We watch them at the library since we have no Internet. God Bless
I Love watching you two, so comical at times, and just being your real self , thanks for what you do and stay happy and healthy 👍🙏
Very interesting and unique. Good video, keep up the good work.
Justine, I can smell those lemons 🍋 😊
Perfectly delightful video..from your lemon yellow dress, apron, cookware to the lemonade..💛💛🍋🍋great recipe too.
My stepmother used to make two versions of this same recipe:
For the cold and fast version. she left out the eggs, quartered the lemons and oranges, pureed them in a blender with the sugar and spices and ice cubes, strained the puree through a sieve and served.
She also made the egg whites and yolk method on occasion which, like in the video, takes a few more steps and takes longer to prepare. That was like drinking a lemon/orange creamsicle.
This was my favourite. before I developed an allergy to oranges.
The simplicity of some of the recipes and the way she cooks is fantastic. This channel has helped me tremendously in the kitchen.
Oh my gosh I want to definitely try this! Looks really good!
Cloves in lemonade? Never heard of that. 😊
Love the zester, never saw one so big! Love your videos! Thank you! ❤🎉
Lemonade on a hot but beautiful day! What couldn't be better? I'd love to give this old receipt a try.
You both are so awesome. Thank you for great videos and educating us. I really appreciate your content.
This is a very unique style of lemonade. I’ve never heard of lemonade with egg whites or cloves! It sounds delicious though-I would love to make it before the end of the summer 🥳🤩
If you’ve ever had an Orange Julius at the mall, that had egg.
Very different!! Thanks for showing the recipe!
Looks great Justine! Didn’t know their was a lot more work to lemonade back in those days…..Thankyou for posting……I love drinks that are made back in the day and also desserts!
Adding the sugar! Thanks for bringing a chuckle to my day.
Were summer kitchen's a sign of wealth? Bravo, it could not have been easy being next to that fire.
How very interesting! I am watching this after seeing your other video on which I expressed my doubt at serving it hot in winter as I assumed the egg whites would coagulate and now I see that you actually do bring it to a boil anyway before straining and cooling and the egg whites do NOT coagulate. I must give this a try. Sounds really fabulous!
Definitely interesting ingredients for lemonade. I've always just used lemons, water and sugar. Oh and I love that yellow dress you're wearing. It is so pretty!
Love that grater!
I'm new to your UA-cam channel and I really enjoyed it. These videos remembering Laura's stories to me, like The Little House on the Prairie... 🥺❤️
Oh that looks delicious!!! You look so hot though Justine! 💗 Hopefully you cooled off with that nice refreshing lemonade! I’m definitely trying it this summer! 😊🍋
Absolutely mesmerizing. Wonderful video, thank you.
Cool Tin Grater, I need me one of those…😊
I love this grater, too! Usually the zest just gets all over the place because there's no drawer to keep it contained. I would love this tool!
Thanks for the history paragraph, along with the recipe. This sounds delicious.
Thank you for sharing this amazing experience ❤
Made My Mouth water. 💧
I have Never Seen a Grater that Big before. 😮
cooking & a history lesson, what more could I ask for!😊
I love your guys content, and you guys! Many blessings to you 💛
Thank you and may God Bless you and be with you always
@@EarlyAmerican thank you 💛
You find such wonderful contraptions. Love it.
I enjoyed reading the “Little House” books and specifically remember reading how during the 4th of July celebration in DeSmet, SD, each one of the Wilders, Laura, Pa, and Carrie, drank from a tin cup, hung by a string, to dip into a barrel of ice cold lemonade. Same cup for everyone but what a treat! The town may have charged or taken a donation beforehand, I don’t remember, but it was special to them.
The "Little House" books were among my favorites to read as a kid! I do remember in the first chapter (I think) of "The Long Winter," Laura talks about delivering ginger water to her Pa, who was working out in the field collecting the hay. I've often wondered what that ginger water would taste like. As a kid who was still learning the art of cooking, the only ginger I knew about was powdered ginger. I added it to water, and it was awful! I figured there was more to it that I didn't know about.
Justine: Have you ever seen any mention of ginger water in those older receipts? Ginger would be very good for the stomach in this scorching heat. I'm down in SE Texas. Our highs have been around 95-96F; heat indices have been around 107-109F with all of this humidity. Please be careful with this heat!

How very interesting. I can understand putting the egg in,people worked so hard in those times, getting in some extra protein was necessary. I might try this but I can't stand cloves in anything, the spices are out for me. You do indeed look fresh and pretty in yellow and white! See you later to eat some watermelon. I've had several already they were sweet and delicious, very refreshing.😊I just got some garden fresh yellow squash and a zucchini gifted to me. Summer is giving, what a blessing.😇🥰
Maybe add a bit of grated ginger instead. It's delicious in lemonade. Adds a little 'zing', without the pronounced taste of the cloves (I'm not a fan, either 😉)
💜 Congratulations to Mr.& Mrs. Ron Rayfield ! 💜
Interesting to learn all the benefits of just lemon water as well.
The cabin is looking fabulous
Hello Justine and Ron! I am from Germany but live in the Dominican Republic and find your channel very informative. Some of your old recipes remind me of my youth in Bavaria. I am also reading all the "little house" books with which you are surely familiar. So I have a question: Neither in the books nor on your channel is mentioned where everybody is doing their necessities Was an outhouse normal for everybody ? I know its kind of an awkward question but its part of life. Saludos from the caribbean!
I love this channel and American history. This period especially. I wonder how old the cabin is.
That actually looks really good, i may have to try making it!
Hi Justine…what a fascinating video!…I’m surprised to see eggs in lemonade!…I love the photos at the end of the video depicting what folks looked like & how they sold lemonade!👌👌🤗🤗….Also, your dress is beautiful Justine!😍😍😍
A wooden grater?!!! And holds up to citrus juice! That’s quality there! Great video
I like these summer time videos to cool down. Switchel recipes also
Love the dress and what an interesting receipt. Thirst quenching and filling. I want my granddaughter to see this!
Yummy lemonade
Cheers☺️😍☀️🍋🍹🥛
I show this channel often to my homeschooler who’s going into the fifth grade this year. Dude is going to have A fine sense of history ❤❤❤
I love that zest tool! Could/would it have been used for other things, like nutmeg or cinnamon? It looks a lot like the coffee grinder you used in another episode.
Looks refreshing and tasty.
You guys are adorable! That intro was my favorite 😂😊
You made Two Alive, with a hint of Orange Julius!
I love watching the occasional video with action only & no talking & minimal screens to read.
I never would have imagined that 200 year old lemonade had eggs in it.
Oh my goodness! I love that grater!!!
Receipt: cloves
Me: Oh no, Justine’s eyebrow makeup! ❤❤❤
That does look good and I’m gonna try to make this (with all my modern conveniences though 😉)
Loved the video. Sounds really good. ❤❤
I can kind of see the egg whites to thicken. But the one yolk seems a bit odd. But I'll take your word that it works. Nice to get a little relief from the heat with last night's rain in STL.
I never knew it could be so complicated to make lemonade, but in a time when it was sometimes a good idea to boil all your drinking water it makes sense
As soon as you added the egg, I said "it's an 1832 Orange Julius!!" 😂
Fascinating!
I’m not sure how I feel about this 🤔 I would definitely try it though. Thanks for sharing, love! ❤
Yall a trip.. i love it. 😂
Couldn’t wait for Wednesday night’s to come to watch both channels 😊💖😊💖
I'll have a go at this one! Do you use up the yolks in another dish? It would be so easy to to make noodles!! This would definitely be a great homeschooling project!!
It looks quite refreshing Justine. If it's as hot in Missouri as it is in North Carolina today, I feel for you in the cabin with a fire.
YUM!!!!!!!!!! Did they have cold sandwiches or non cooking dinner meals back in the 1700's? Something you can make without having to cook over the fire, or use your baking oven outside of the cabin.
People credit the Earl of Sandwich with inventing the sandwich in the mid 1700s, but sandwiches have been around for millennia.
That's actually a little pricy for lemonade back then when you could get a pint of beer for a half penny. Lol.
Not so much when you consider the price of citrus and sugar in the time period and it not being made in extremely large batches like beer.
Beer materials can be grown in more cooler climates like the hops.
They're newlyweds. I suspect that lemonade comes with benefits.
What a lovely, interesting recipe!❤
I love vintage stuff so much, I wonder how you get it
Love that tin grater!
Girlie … time for cooking in the summer kitchen !
I am completely in love with that dress. It reminds me of one my Mom made me as a kid.
Would be nice to see you make Stag Sumac tea when the berries get ripe. It makes a good Lemonade substitute. Good Job.
Anywhere that wasn’t tropical and didn’t grow citrus naturally, I’m sure the fruit was not as fresh as we are used to today
I never would've thought to add eggs to lemonade. I'm sure this was probably expensive to make way back then what with all the sugar and citrus. I might have to try this, i think it'll be fun.
