    In the Philippines we got so many ways to cook these purple yam. The most traditional way is simply boil these with skin on. Just peel them after they are cooked. The texture is better, not mushy if done this way. Once cooked, these purple yam are no longer slimy. When you cut them after they are just cooked, you can smell the sweet flavor from the steaming yam. We make caramelized brown sugar with coconut milk we call latik as the dipping sauce for the purple yam. Very good afternoon snacks in the village.

      Does it taste like cassava or taro or does it taste sweet like a sweet potato ? Can it be eaten with fish or meat curries/sauces ? Does it itch like an Elephant Yam? 🙂
      Ive heard they make ice creams and sweets in Philippines with this ?

      I'd bake them over a fire until the skin is charred, then peel n eat it. But that works too.

      The young leaves are also cooked together with bamboo Shoots when there is an scarcity of okra or saluyot leaves during summertimes.

    Just mushed it, add condensed milk, fresh grated coconut and a little bit of butter...Then you have a nice Tropical Pudding to Enjoy😀

    A more sophisticated way of cooking these purple yam we call “ube” in the Philippines is making it into Ube Jam. Cook with skin on, then peel once cooked, grate, mix with margarine and condensed milk. Stir constantly under medium heat until thoroughly mixed and right consistency. Put into a dish pan, sprinkle some cheese on top or put condensed milk or caramel... whatever. Bake for a few minutes. You may serve it warm or chilled. You may also make this ube jam as filling for pies. Ube ice cream and ube cake are Filipino favorites. You may also use these purple yam in stew instead of potato. I wish I can plant purple yam in southern California.

    I buried the peels and tons grew out. So basically you can grew them from peel too. It was by accident that it happened. I am pleased it's in my yard now growing a bunch of them. Now I have to move some to the out skirt of the forest in case, later on it's gonna come handy.

    Robbie, we from tropics are very familiar with it. You look on the matured wine and you will find little potatoes (( nodules ) when wine is dry, they drop off and that reproduces more yams. Here I Fl it is invasive . Good luck. I have dug up 17 pounds tuber . Needed lot of water to pour down to loosen the tuber.

      Gary responding. Mine did not produce any bulbils or aerial tubers in their first year. Hopefully I will get some this year. I like them more than potatoes.

    My grandpa’s family of 16 kids survived eating these during the Japanese American War.They had a barn full of purple yum. You can store it in the barn for a year and won’t get bad.

      Wait till next year, he can not Find all the ones he planted, if he misses one, it will be massive next year...the funny thing was, he told me we could not have any to eat THIS YEAR, as he THOUGHT it was going to take years to grow to a good size, from all his research. BUT with the way he planted them, they were very happy, so this was a shock to HIM! Thanks, Robbie

    Yam as. Ben watching a lot of utube on these. One is very intrusive. One gets flowers and turns to little potatoes. You use those to replant...cause main tuber can only produce 3 years. But you can eat the lil ones if you boil and can use in soups .

      Ube yam (Dioscorea alata) is hardy in USDA Zones 9 - 11. It does go dormant in the winter.

    I don't care much for cooked okra, but I love fermented dill okra pickles. And I also seem to always be cleaning the kitchen or cooking. I told my husband that keeping the kitchen clean is like trying to keeping the fire ants under control. Massive yam. Do they get woody if they get too big?

      So far NO none have been woody, which is good, SINCE he can not find them all in the yard, and when he does, some next year could be over 100 pounds. As far as what they are like when raw, once boiled, like potatoes, that 'Jell' is completely gone, and it is just like a White potato, and the "potato salad" I made from them was GREAT and SO beautiful!     U need to steam them like a potato with skin on then peel them easy without taking a lot of the meat part by just peeling the kind by either scraping it lightly with a butter knife or by peeling with your fingers. Then a good recipe we have in the philippines is called Ube Kalamay, which is a sweet dessert. It's really good.

    in indonesia we call it UBI too. but spelled "oo bee" not "U-B"
    usually harvested in end of dry season when the ground was easy to dig, because the UBI layed quite deep about 50cm below the ground surface

      Gary responding. You don't have to hill them like regular potatoes. I have them planted in slightly raised beds for drainage. Especially important over winter if I leave them in the ground. Cool not frosty soil is OK, cold and whet can cause them to rot.

    The best once have strong Aroma and very purple color. Most of those in the Philippines are quite big (Not Long). We boil them mash them and Mixed with Milk (sweetened condensed Milk flavored with Vanilla extract) mix them welll over Low heat Stiftung continuously together and cook them in a deep frying pan or a Wok for a very Long time till it's quite dry and difficult to stir..it's very tasty. Watch you Tube for Ube recipes.

      Gary responding. There is a Sweet Potato variety developed by the Okinawans named Okinawa purple. I believe this is what they ate. It is actually my favorite variety and the flavor reminds me of Biscotti,(short bread).

      eBay and Etsy are good sources for Ube yams. If you live close to an Asian grocery store they may also have them for sale.

    This is very expensive yam and very hard to find in fl. I just found small about in 30 some years I been in this state. Better yam than the white one. I'm growing not and can't wait to harvest. Thanks for sharing your video.

    I buy frozen grated purple yam (Dioscorea alata) and make ube ice cream from it.I see you grow it well and probably in tropical Australia, is that correct? I live in Victoria but, with the right aspect and through the summer months, I reckon I could grow Purple Yam. Purple Yam has a unique taste in ice cream and the Americans have taken this Filipino treat and developed it for ice cream. Are there any hints on how to grow it or is it just similar to growing sweet potato? I think like potatoes and beetroot it is best not to peel them before cooking in water as the water will reduce the flavour and make the pulp more liquid.

      Gary responding. Actually we live in Southern California USDA zone 10a, sunset zone 23. A similar climate to say coastal Adelaide. When I started growing it I wasn't sure if it would grow here. No references found, still none. I would experiment. It goes dormant in the cool months so you could either bring the tuber in or mulch heavy. The vine and the roots die back so you don't need those. I can grow bananas so I leave it in the ground. They are in slight mounds for drainage. Cool not frosty soil is Ok. Cold and whet can cause rotting. I prefer to grow from tubers. I know seeds are available in Australia which might be worth trying but I think tubers do better. They can be cut into pieces.       Gary responding. Some Sweet potato varieties are called Yams in the U.S. Their Latin name is Ipomoea batatas. The Latin name for Purple Yams; Aka Ubi's or true Yams, is Dioscorea alata. Sweet potatoes originated in Central or South America. Ubi's originated in South east Asia. Sweet potatoes tend to vine along the ground. Ubi's naturally vine upwards. I need to get a video on the difference between the two plants.

    One guy buried in big plastic pipe. Easier to dig up. Another put in plastic as hydratufa? He said he learned as cooler weather came he had to feed fish less. A hint would be stinky water. Hold feed a few days and it clears. Wow.

      Gary responding. I'm not 100% sure so I personally don't eat the leaves. Some South East Asians do eat them cooked, or use them to wrap food for cooking.

      No, however the ube bear fruits, same like the roots, its nice as well to eat.

    Ube can be a good alternative to rice but it can't be harvested fast enough like sweet potatoes which only take 3 months to grow tubers. Ube sometimes take one year to grow tubers. The best alternative to rice is sweet potatoes because they are fast growers.

      Gary responding. I grow both because here I have pest problems with regular potatoes. Ube is more similar in flavor to potatoes than any of the varieties of sweet potatoes I've grown.

      I have heard that Ube has a high starch level which is what you need for good browning when fried.

    You should never wash ube when you already cut it into cubes. If you boil them, boil them whole before you peel them. If you already cubed them don't boil steam.

    Try cooking it first with skin, then remove the skin using spoon. Just peel the skin so you don't lose the color. Most of the color is near the skin.

    My parents told us during the World war ll, that is one of the main food that they have because it grows rapidly and they Grow everywhere. As i came to visit my Relations dir the first time in Mindoro, Phil., i brought about 5 Kilos of this sort of Ubi home to Alaminos, Pangasinan. I asked my Cousin to plant it, but i dont know what has happened in the Future. i am hoping that they have harvested some of them already.

      Gary responding. When I was looking for information on this plant I found that in the Philippines they've created a lot of nice varieties of Ubi. I hope your cousin did plant some. Thanks for your comment.

      Just under the skin. Ube needs to be peeled and cooked to be edible.
