    Great recipe! I made it the other night and really impressed my wife. I ended up with extra ingredients and made again the following night. It's that good. Good job with the shooting and editing as well. Cheers!

    I know this is a somewhat old video, but we just discovered it. We made this recipe last Sunday and it was absolutely delicious! The only change I made was to add a small amount of rubbed sage to the fresh sage in the sauce (my wife's request). We'll be making the Mushroom Ravioli next Sunday. Really looking forward to it.

    This is one of our favorite go-to showoff meals! Each time we've made it, it's been absolutely delicious. I'm currently prepping a double batch to bring to Thanksgiving dinner. One of my all time favorite dishes! Thanks for the amazing recipe :)

    Ok, I got this one out of the way (with browned butter have sauce) ;) excellent filling!
    The nutmeg/cloves/staranis combo really makes the squash shine. The addition of cheese gives creaminess and a tinge of salt. Loved it. I have some progress to make in order to have good looking ravioli though! Good for the next valentine's day :) thanks Steve!

    That is brilliantly colorful and amazing looking dish. The potography was just awesome. also learned quite a bit from your technique here for making the Pasta. Have to invest in a Pasta machine at some point soon too. Great use of Squash and Pumpkin too for the season right now.

    Another one we did along the same lines was with sweet potatoes and made a creamy sauce using gargonzola cheese.

    Watching your old videos are always fun. I don't know why I never considered the idea of Pumpkin or Squash Mash but you essentially made it before you put it into the Ravioli with the Mascarpone. I'll have to make that and just put a Meat on top.

    Would love to make it with homemade pasta but I bought fresh sheets from a shop (does that count?) Great squash filling! Fresh herbs are still growing in the kitchen so we have lots ravioli in the fridge - butternut, mushroom ravioli, beef, veggie - for quick meals (along with some sauce). The sauce here was fantastic and I used fat-free cream. Great video!

    Quick question : can I make do with dried sage (rehydrate ?) or is it a lost cause without fresh produce?

    Make sure you wet the edges of your pasta and REALLY pinch the two halves together.. I just spent about 2 hours making 20 raviolis only for them all to come apart into a soup when I tried boiling them.

    What type of flour?

      You can use all-purpose flour, but the pasta is best if you can find "double aught" or "00" (that's zero zero) flour. Martelli, Granoro and Caputo are good brands. Or you could use King Arthur "Italian Style" flour. These are all made from "soft" or low protein wheat.
