Mini Meatloaf - A Comfort Food Classic!

  • Tender and juicy mini meatloaf is topped with a sweet and tangy glaze. Easy to make and filled with flavor. Best of all, it’s the perfect amount for one!

    ✴️ Ingredients
    1 tablespoon olive oil
    2 ounces chopped onions
    1 clove garlic , minced
    1 teaspoon dried thyme
    1/2 teaspoon kosher salt
    1/4 teaspoon black pepper
    6 ounces ground beef
    1/2 teaspoon Worcestershire sauce
    1 large egg
    3 tablespoons breadcrumbs
    For The Meatloaf Glaze
    1/4 cup ketchup
    1 tablespoon molasses
    ✴️ Instructions
    1) Heat oven to 350° F (177°C).
    2) Heat oil in a medium-sized skillet over medium heat. Add the chopped onions and cook for 2 minutes.
    3) Add in the chopped garlic, dried thyme, salt, and pepper. Cook, stirring occasionally for an additional minute. Remove skillet from the heat and set aside.
    4) Place the ground beef in a medium-sized bowl. Pour the seasoned vegetables over the meat. Add in the Worcestershire sauce, the egg and the breadcrumbs. Using a large spoon, mix the meat and all of the ingredients together until fully combined. Shape into an oval and transfer to a lightly greased small baking dish.
    5) Bake in the preheated oven for 30 minutes.
    6) Remove the meatloaf from the oven and whisk together the ketchup and molasses in a small bowl. Spoon over the top of the meatloaf and bake for an additional 15 minutes.
    7) After removing the meatloaf from the oven, cover with aluminum foil or a plate and let the meatloaf rest for at least 10 minutes before slicing.

    Family of 5 plus all the family get togethers through the years down to 1 takes some getting used to. I've always found it easier to multiply a recipe to increase versus taking a recipe down to an individual serving.

    I made this tonight for supper. It was delicious and I followed all instructions. First thing I did was buy a lb of ground beef, something I rarely buy because I never know what to cook for just me. I'm over 60 and always feel I have to buy precooked food. I divided the lb in 3 and froze the other 2 pkgs for some of your other recipes. I love all your videos. You explain things so well, and make me feel relaxed. Thankyou, so happy I found your channel 😊

      I cook 3-4 portions at once, eat one and freeze the rest in small (0.5L or 2 cup) freezer containers. Label the containers and keep a list. Even one freezer shelf can hold a reasonable selection. Make it part of your bedtime routine to put one into the fridge to defrost overnight. I set a reminder on my phone. Use ordinary shop precooked packages as a reheating guide, and adjust if needed. You may make a few mistakes at first - I certainly did! But that's allowed, nobody's going to bawl you out, and you'll soon get the hang of it. Keep a list of recipes you know you like and can make, and add to it when you find something new. You've already started with this meatloaf!. Don't push it, build up gradually to a point you're happy with, and don't beat yourself up about anything. Everyone has their own sweet spot, and that's fine.

    This is delicious!!! Highly recommend. I didn’t have molasses, so I used 1/4 cup of ketchup, 3/4 tbs of honey, and a little over 1 tsp of dark soy sauce. The result tasted like BBQ sauce. I also didn’t have Worcestershire sauce so I used hoisin sauce instead.

    I love using salsa on top of my meatloaf instead of ketchup or bbq sauce!

      I saw someone else do that while I’ve been doing my meatloaf research. Sounds pretty good! Do you use a thin layer so it kinda sets up instead of just being hot salsa?

      @@Naltddesha yes, just a thin layer of mild salsa. I don't like spicy, but mild still gives a lot of flavor. Delicious!

    I've added this recipe to make this week. Thank you for the video! Question: If someone is a diabetic what substitute is there for the toping. Ketchup is loaded with sodium and the sugar in molasses is way over the top. Suggestions?

      Hi Catherine, you can actually leave the topping off the meatloaf and it will still be absolutely delicious. However, if you want to make a topping you can use sugar-free tomato sauce. I like Classico Tomato and Basil brand which does not contain sugar.

      I'd try organic honey, sugar free ketchup, or sugar free zesty salad dressing like a catalina.

    With such a small loaf it will help to soak the breadcrumbs in milk for at least 20-30 minutes. Try this is your meatloaf is drying out.

    I'm happy I've found you as you are so comforting unlike some of the drama queens, & kings on food channels. I am, or was an excellent cook, baker, and candy maker I learned from my mom, maternal grandmother, aunties, and 9th grade Home Ec class teacher Miss Pretzel (and my oldest sis was a wonderful cook of all categories). My paternal grandmother, & auntie were great cooks, bakers, and candy makers too. Since my husband passed I no longer cooked like I did; even worse since becoming disabled from general & spinal arthritis it takes me sometimes two days to make a meal because of having to set down becaue of pain I break the tasks up prep, dice, ect then I simply lose interest. I throw out food constantly, & I am so very ashamed of that. However, I do have some chubby creatures who reside in my yard. I REALLY feel bad because it seems like today more than ever there are so many tragedgies with weather and fires people losing everything they have; it makes me ashamed. I've tried cuting up recipes, but sometimes I just can't concentrate. Then wala! Surfing youtube I found you. Thank you so much for making what seems like a monumental, (but really simple task) for a seasoned home cook, and breaking it down for me. I know it costs more, but when one is pain I'll pay extra for ground beef patties & preped meats, ect. As far as the wasted veggies; I sort of hate not giving them to the critters as they get hunger too especially in the winter! Thank you for sharing your gift with us👨‍🍳🍅🥩🍗🥣🤟🥰🍸🐶🥓🍖

    Can I freeze the cooked and glazed meatloaf?

      I recommend freezing the meatloaf without the glaze. If the meatloaf is baked, let the meatloaf cool, and then wrap it in foil or plastic wrap and place in a freezer bag. Freeze baked meatloaf for up to 1 month. When you are ready to enjoy the meatloaf, thaw in the refrigerator, make the glaze and add it the meatloaf. Heat in the oven for 15-20 minutes.

    Suggestion. If you want to reduce clean up, microwave the veggies for 1.5 to 2 mins in oil.

      If you're a single person, you probably will have leftovers. I always do - either make meatloaf sandwiches or reheat the next day.
