    Veggie Yaki Udon
    Ingredients:
    3 cloves garlic
    1 red onion
    1 medium red bell pepper
    1 stalk spring onion
    200g king oyster mushrooms
    100g cabbage
    400g udon noodles
    2 tbsp cooking oil
    Sauce:
    2 tbsp coconut aminos or soy sauce
    2 tbsp vegetarian oyster sauce
    1 tbsp rice wine vinegar or mirin
    2 tsp coconut sugar
    black pepper
