The first saddle would've been good enough for me. Selle anatomica is fast stretching, extra screw length can't hurt. Craftsman built our country and where have the gone? Nice to watch you work!
I love the video and feel your frustration in trying to get the screws back in. However, by using thicker leather, the saddle will probably take longer for the owner to get it conformed to his sit bones.
A Brooks saddle would be easier to do. I would think. Large copper rivets instead of aluminum screws. Plus no crotch slot. I still think you need to look into redoing them for cyclists.

What was the blue tape for?
The blue take is to stop the leather from caving and deforming while tooling it.
