There's more than one way to get the results you want in Photoshop. When time is tight (such as in a short tutorial video) the simpliest way is my prefered way.

Hi Roger. On paper ISO 64 is probably infirior to ISO 200 (on Olympus cameras) but in the rreal world... it's the same 😉

What I'm wondering is why don't you use non-destructive editing by using adjustment layers. That way you could go back and fine tune your adjustments.
Everyone has own techniques. Gavins editing is on Point, so No need for adjustment layers 😁
