This is how we calibrate temperature probes in the refrigeration industry. Get a bowl of water filled with ice and let it set for 5 to 10 minutes. While stirring the the ice water and put the probe in and let stabilize. The probe should read 32 degree F, if not calibrate to 32 and put in use.
Their aren't much thermometer reviews on the web. I have a lifeguard temperature thermometer. I can't find any reviews on it but it seems to work great and it looks solid.
I should add that you can also change the name of the "temp" or "PX4" through the display on the Apex. I have two tanks being controlled by my Apex Jr. So I named them 10temp and 28temp. Just a suggestion.

Are you able to calibrate with boiling water (100) and icewater(0)?

Nope, that is permanently fixed and shouldn't come off. :)
I can't got my temp to read passed 35.8F when my tank is 78F any help would to grate
