I couldn't get 00 flour, so used general purpose flour, which I sifted twice, and it all worked out really well. First time I've ever made pasta, and the difference between home-made and shop-bought is phenomenal. Well worth the small effort and very satisfying. You gotta love Gennaro!

Thank you for the food processor idea. Since I got Arthritis in my right hand, I am unable to knead dough anymore. This is brilliant. I tried it, it works very well.
For perfect pasta I use 1/2 durum 1/2 semolina wheat( they are basically the same thing but the grind is different) and water. With 00 flour you get a softer dough and with the addition of eggs the dough is good for silkier pasta's like Pappardelle or Fettuccini . For Southern Italian pasta's Ravioli, Ziti etc. The harder wheat product is better and more conducive to filled and stuffed pastas. It is less likely to tear or fall apart.
You hit it spot on. But that is getting too complicated for the average TV dinner eating clown. These are things every one should know to feed their families well.
I was surprised to see eggs used, since Italians are known for looking down on noodles. A lot of the recipies almost look like nokedli, which makes me think why not have paprikash instead.
Finally a video that knows what its talking about. Using only 00 flower will give a smooth tecture only, but the pasta and saus should dance together, so the pasta ahould be more rough. Hence the semolina. Thanks for the amounts

Double Zero flour is referring to the fineness of the sift. Triple sifting regular flour will give you a very similar consistency. Just make sure to at least use a basic bread makers flour for the higher protein content.
That's what google is for my friend... A quick summary tho - the grading of flour not only indicates how fine it is but how much bran and germ has been removed.

This is an excellent recipe !!! Super easy . I made ravioli . It was quite yummy for my first attempt . However , I had to add more flour as it was initially very pasty .
tip: only use 80 procent of the flour in the recipe, and then you can add more flour when you knead it, that means it wont get dry and hard so you have to add water, becouse if you add water, it makes it sort of gooey PS: love you gennaro

I guess he learnt his English from someone who spoke English (as opposed to a book) and films, but as far as I can tell it could have been someone actually English, a Canadian, or even a Yank. If someone told me he learnt his English from Glaswegians or from Connemara folk then I'd be a little surprised, but not knocked off my feet. I can really only hear English spoken in an Italian accent. I guess a bit of Jamie Oliver's idiom has also rubbed off on him, but not a lot, eh?
My husband (who was married to professional chef before her untimely death) always tells me my food tastes great because he can taste the love in it. *Love* is a real ingredient.

I didn't have any semolina just Canadian all purpose flour not the US type. I used 2 cups of flour (not sure of how many grams, no scale), four small eggs, 1/2 tsp salt and about 1 tbsp olive oil. I had a hard time getting it mixed together I thought I made a mistake but I see it was just like you Gennaro so now I feel better I did it right. Mine turned out pretty rubbery but just a bit not too bad it wasn't bad just a tiny bit rubbery.
The flour he used is lower in gluten level than all purpose flour. It's sold as cake mix or low gluten flour. If you can't be bothered going to buy it and you happen to have corn starch, you can mix it with normal flour in a ratio of 1:3 to get a similar result.
