    ➥RECIPE:
    2 ½ cups Flour (475g)
    1 tsp Baking Powder
    ½ tsp Salt
    1 tbsp Cornstarch (optional)
    1 cup Unsalted Butter (2 sticks)
    1 cup Sugar (260g)
    1 Egg
    1 tbsp Vanilla Extract
    1 tsp Almond Extract
    ½ cup Crushed Freeze-dried Strawberries
    COOKIE ICING:
    2 cups - powdered sugar
    2 tbsp - meringue powder
    1 tsp - vanilla extract
    3-4 tbsp - Water
    ➥INSTRUCTIONS:
    ① In a medium sized bowl, Combine the dry ingredients and whisk them together.
    ② In a large mixing bowl, Cream together the butter and sugar. You can use cold butter right out of the fridge, cubed, so it’s easier to cream. Mix for 2 minutes. Add the vanilla extract, almond extract (optional) and egg. Mix it until just combined.
    ③ Add the flour into the wet ingredients in 3 stages, mixing until just combined after each stage. Note that towards the last stage, it will be tougher to mix because the dough will start to come together. Once all the flour is in, work the dough with your hands by folding it in together until you no longer see the flour.
    ④ Pre-heat your oven to 350 degrees Fahrenheit. On a floured surface, flatten the dough with a rolling pin to ½ an inch thick. Sprinkle some crushed freeze dried strawberry. Lightly press and roll it in with your rolling pin.
    ⑤ With your cookie cutter, cut out your desired shape and place on a baking sheet lined with parchment paper. Re-roll the dough and repeat the process. (You can freeze some of the dough if you want to save some for another time. To freeze the dough, wrap it tightly in plastic wrap and store it for up to 3 months. Defrost in the refrigerator the day before using.)
    ⑥ Before putting your cut out shapes in the oven, place the pan in the refrigerator for 10 minutes. We want to bake these chilled. After 10 minutes, bake them in the oven for 10-14 minutes, depending on the size. For larger cut outs, you’ll need to keep them in the oven a bit longer. You’ll know they’re ready when they start to turn golden brown. Keep in mind, the freeze dried strawberries will get darker the longer they are in the oven.
    ⑦ Once they are cool, you can store them in the freezer for up to 3 months and use them as needed. To create the cookie icing, using a handheld mixer, mix the powdered sugar, meringue powder, vanilla, and water. Test out the peak for stiffness and add a little powdered sugar or water to create your desired consistency. Decorate and enjoy!
    Store in an airtight container for up to 5 days.
