I would have to dig it out, but this looks very similar to the recipe that my grandmother used to make. I think they served it at my parents wedding dinner! It was often made from her canned carrots and on the buffet table for family gatherings! I think I would like the extra crunch by using fresh that you only slightly cook!
I used some pickle crisp-I think that helped. It was my first time canning them but I had so many extra last year. I just followed the usda recipe I believe. I will have to figure it out because I need more!

I have a recipe called copper Pennies. Idk if they are the same or not but when I come across I’ll be curious to see. I don’t remember the tomato soup lol. Interesting. ❤ I’m still going through things in my childhood home and I found old recipes cut out of magazines, news papers and things like that. I thought of you. ❤

My mom made this every thanksgiving for my dad. Must have been popular during the late 80’s. 🙂 Sadly to this day, I still can’t eat it.

I like some crunch but not totally raw. They still soak in some flavor too

My brother says he can’t read moms handwriting. Never has been able to. I usually can. Some were written in pencil though and that fades
I’ve heard of regular carrot salad with raisins and shredded carrots but never heard of this copper penny salad.
I am not a fan of raisins so I never would eat that salad. But this one I liked. Lol.
