Your cookbook arrived today and this recipe for Copper Pennies was the first one I read. My mother-in-law used to make this for her bridge luncheons. We always prayed for left-overs because they were so good! Now I can make them myself! Thanks, Diane!

I think this would be really good using stewed tomatoes and bake it for a just a little bit and serve with some Cornbread and Butter Beans! Just an idea for a little twist on it. I'm definitely going to try this. Sounds so good. Thank you so much... God Bless. 🙏🙏❤❤😁
My grandmother made it with fresh carrots but you have to parboil them for about 5 minutes. I’m not sure about oil and canning. You could pickle it and can it I think.
I could saute/steam the carrots instead of using canned because I don't buy canned vegetables. I never see canned vegetables you use like this up here in Canada. It's one more step, but that's okay.

Copper Pennies was a regular at my grandmothers Sunday lunch starting in the 70’s. I add hot sauce to mine.

One of my favorites that my Grandmother made.
I have always used fresh carrots, but at my age (84) I think the canned ones would work just as well.
I told my mom just the other day I wanted to make my grandmas “Pennies from Heaven”, at least that’s what we’ve always called them.

yes but you would need to cook/boil them prior to soften them : )
The original recipe from the 70s or so called for sliced carrots that you cook about 8 - 10 minutes until tender.
