I really enjoy Meme’s videos. Meme reminds me of when I was younger. Hearing my aunts and uncles talking. That southern drawl is so familiar. I’m going to make this recipe, I know that it’s a salad that I will enjoy.

Your cookbook arrived today and this recipe for Copper Pennies was the first one I read. My mother-in-law used to make this for her bridge luncheons. We always prayed for left-overs because they were so good! Now I can make them myself! Thanks, Diane!

I wish I could send you some of our rain from Ohio. We've had enough for awhile. Copper pennies look good, and I can't wait to make!

I remember this dish, being served at summer picnics and bbqs, when I was a kid(In the 70s). It was one of my favorite sides. I'm from northern Wyoming.

Copper Pennies was a regular at my grandmothers Sunday lunch starting in the 70’s. I add hot sauce to mine.

I think this would be really good using stewed tomatoes and bake it for a just a little bit and serve with some Cornbread and Butter Beans! Just an idea for a little twist on it. I'm definitely going to try this. Sounds so good. Thank you so much... God Bless. 🙏🙏❤❤😁

I have always used fresh carrots, but at my age (84) I think the canned ones would work just as well.

I told my mom just the other day I wanted to make my grandmas “Pennies from Heaven”, at least that’s what we’ve always called them.

I wonder if you kept the oil out and used freshly sliced carrots if this could be canned? What do you think?

My grandmother made it with fresh carrots but you have to parboil them for about 5 minutes. I’m not sure about oil and canning. You could pickle it and can it I think.

I could saute/steam the carrots instead of using canned because I don't buy canned vegetables. I never see canned vegetables you use like this up here in Canada. It's one more step, but that's okay.

The original recipe from the 70s or so called for sliced carrots that you cook about 8 - 10 minutes until tender.

Lucybraga, this is categorized as a salad, so I’m thinking that it is served cold.
