Sweet-Sour Cold Carrot Salad - Copper Pennies!

  • This is a family favorite around here - Copper Penny Salad! The cold, crisp, sweet and sour salad is a BIG hit when the warm weather comes on. The bright orange carrot pieces, with a backdrop of onion, bell pepper, and tangy red sauce is just about irresistible!
    This recipe is one of Dirt Farmer Maggie’s Heritage recipes that have been handed down in our families for generations. It has graced the table of many a family meal or BBQ and is readily accepting of additions and subtractions of ingredients. Want different colored peppers? Add ‘em! Less onion, perhaps some garlic? Go for it!

    My mother made this and now I do. I never met anyone else who makes it. We love it with ham, sandwiches, and even dressing. Yum. 👏🏻👏🏻

      Thanks Jensuechiv. She was an amazing woman. We lost her about 6 years ago. I owe her so much for everything she taught me. Now that I am the grandma (with first great grandchild coming in Oct. - making 17 grandkids) I have some big shoes to fill to be like her! Best to you my dear. DF Maggie

    OMG! Thanks for sharing the recipe! Looks so delicious, and what a great move to leave it overnight in order to marinate and soften all the raw ingredients!
    I'm going to try and instead of quick boiling the carrots I'm going to slice them thin with a potato peeler so that they get soft easier after marinating overnight.
    This recipe reminds me of some sort of coleslaw I tried in England some years ago.
    I'll get on with your recipe straight away! 😀

    What vegetable could I use in place of bell peppers. They cause such bad reflux I cannot even near the smell if them

      Hi Miss Gaile. Thanks for writing. I had doubled the recipe and served it at our garden party to about 25 people and had leftovers. Of course there were lots of other side dishes too. I'd say, with the double recipe, it would provide a generous portion to at least 15-20 people. The great thing is, it keeps in the refrigerator for a long time - a week or longer.
