To clarify, he is making Japanese yakitori. Dakkochi is different. We do eat skewers in Korea but we do them a bit differently. Toriya is a Japanese and it's obvious from the setup and method. Nothing wrong in it. We have many great Japanese restaurants in South Korea, hope people will visit!!
It's so mesmerizing to watch masters do what they do the best. It doesn't matter whether it's a sport, science, cooking or art, it's always inspiring to see how good you can be doing something you love if you invest enough energy and time in it. 🙄

They’ll have different textures that pull apart differently because of the varying muscle groups, but, yeah, would be same taste.
