Sweet, salty, tangy, spicy peanut sauce with tender chicken and it's simple.

Ingredients:
Chicken -
- 500g chicken breast
- 1 tbsp salt
- 1 tbsp sugar
- 1 tsp bi-carb soda
Satay Sauce -
- 1 large onion
- 1 large carrot
- 2 spring onions
- 2 cloves garlic
- 1 inch ginger
- 1 red chilli
- 1 lime (juice)
- 1/4 cup honey (or organic cane sugar pucks, but they can be hard to find)
- 1/4 cup peanuts
- 1/4 cup soy sauce
- 1/4 cup peanut butter
- 2 tbsp curry powder
- 200 ml coconut milk
- 1 tsp MSG
~ 1/4 cup neutral oil
Rice -
- 2 cups medium grain white rice
- 2 cups water
Method:
- Cut onion and carrots into batons.
- Mince whites of spring onion, garlic, and ginger.
- Slice chilli and greens of spring onion.
- Butterfly and slice chicken, season with salt, sugar, and bi-carb soda.
- Heat wok and fry peanuts in oil until golden brown (be careful because they burn quick) and keep oil for later.
- Rough chop peanuts.
- Stir fry vegetables in oil from earlier until soft.
- Remove vegetables and stir fry chicken.
- Once chicken is ~90% done add vegetables, most of the peanuts, peanut butter, soy sauce, curry powder, half the lime juice, and coconut milk.
- Once thickened add greens of spring onion, chilli, MSG, then season to taste with more soy sauce, lime juice, and honey/cane sugar.
- Wash rice and cook in rice cooker
- Serve and garnish with coriander, peanuts, and lime wedge.
The pucks of organic cane sugar would be preferable over the honey, but I struggled to find them, so use whatever is easiest for you. Also I forgot to buy fresh garlic and ginger so just pretend I added it :)
