I did strained mine quite a lot before it went into the dehydrator. I used a very fine cheese cloth. So it only needed about 6 hours to get to a nice consistency.
I think the temperature there is so hot that the bugs go into hiding until it's cooler. He could also be coastal, where there is always a bit of a breeze, so the bugs stay away. There are some great videos about out door dehydrators that might interest you if you live in a warmer climate. Where I live, it is humid enough that I am not sure this method would work but it was really cool to watch and learn. ☺

i pass the tomatoes through a very good juicer (hurom) and then strain the juice through a very good cheesecloth (the liquid that passes through is clear) overnight in the fridge. Then I boil the strained pulp for 20 minutes and bottle it. No need for those machines or the sun or anything else :)
A lot of time and work for this small jar of paste 😅 It's more like a delicate art project. I guess, this type of tomato sauce you won't find anywhere to buy. You have to do it yourself

Thank you for stressing that the salt should be without iodine. The salt most people have in the kitchen contains added iodine. Too much causes serious illness. I really appreciate that you warn people.
bs! nobody is getting too much iodine unless they chug it out a bottle. You can't eat enough salt to overdose on iodine and youre not getting iodine anywhere else.

No refrigeration necessary but you do always want to keep it in a dark cool place.
