Ingredients :
Water dough (水皮):
250g high protein flour (高筋面粉)
1 tbsp caster sugar (细砂糖)
70g shortening (白油或猪油)
1 tsp lemon juice(柠檬汁)
150ml water(水)
Oil dough(油皮):
250g plain flour(普通面粉)
170g shortening(白油或猪油)
Filling (馅料):
1.6kg yam paste/taro paste (芋泥馅)

50 toasted melon seeds (烘香瓜子仁)
16 salted egg yolks(咸蛋黄)

Thanks for showing in so detail, I made before but not from your recipe, they were great but yours looked much better as you showed us must roll the pastry and fold into half then continue and then roll it to very very long and must lift up a few times when we deep fry the Taro Mooncake. Now I know the secret to make it many many layers.
I will not make it now as I have plenty of mooncakes from business frients. May be the end or next year .

When I first saw these moon cakes, my first thought was ‘it must have taken a lot of time to make those’. I wasn’t wrong! Much respect to Katherine Kwa for developing the recipe. The end result looks wonderful and too nice to eat.

Exactly,the one that took the longest time is to roll out the mixed dough, cannot use too much force otherwise the oil dough will burst out of the water dough and the result is not beautiful.
I've tried this recipe including the yam paste. The yam paste is too sweet and oily so i'll reduce the oil and sugar next time. I put two pieces in the oven as experiment and the result is the filling burst out and it took so long (170 degrees 40 minutes and still not yet turn golden brown). But the fried ones are so beautiful and yummy, crunchy at the outside and so soft inside.

The high protein flour can it be mix with cake flour or just high protein flour? And for oil dough, no need to use cake flour?
The high protein flour cant be mixed with other flour coz it need highest gluten flour for it to be elastic. You can use cake flour for oil dough.

老师你好!如果改用烘烤烤温和时间是多少?紫色素是添加在水皮或油皮添加多少?
ANGIE TEH 紫色素是添加在油皮,添加两、三滴就行了。烤的温度通常是以180°C,烤25-30分钟左右。

猪油代替白油,因为起酥油 / 白油是一种非常有毒的油,即使是热沸水也不能融化它。Lard replaces shortening because shortening is a very toxic oil spread that cannot be melted even pour in boiling water.
