Just made it today. I added some crushed walnuts to the crumble. It was splendid!! Thank you so much Jack for the easy to make recipe. I was a bit nervous when adding the hot milk to the egg yolk mixture, but it turned out just as you said! Best of all, the custard is not too sweet. Best apple crumble ever!

Yes you can use peaches. I’d cut the sugar down just a little bit if you are using peaches as they contain higher amounts of sugar. The Granny Smiths are more acidic and have less natural sugars than a lot of other fruits.
I could be wrong but I believe because red apples are much sweeter that they caramelise too much and become too soft. I think a sour apple is better for this but I'm sure Jack will reply to you 😊
Like Brody said. They contain a higher amount of natural sugars and will burn faster. This can be bypassed by not pre cooking the apples and baking them raw. The reason Granny Smiths are the most popular for these types of recipes is that their flesh can absorb moisture and hold its shape, whereas other varieties, their flesh does not hold up and will turn to mush. You can jazz up the recipe by mixing some rhubarb or mixed berries through the apples for some different varieties. I hope this helps you! 😊

You need to cook it for slightly longer but you have to be very careful not to scramble the eggs. Haha they’re good towels 😉

Granulated white sugar is perfectly fine. You can also brown sugar for a deeper molasses flavour 😊
