Hey Tyler - I've owned an old WorkSharp for years and I'd REALLY like to see you test out one of the aftermarket leather strops for the WorkSharp - it puts a mirror polish on the edge & I think it will make a huge difference on the sharpness tester because I think the problem you're having is that there's a micro burr on the edge after you've sharpened it, just make sure if you use it to make sure the belt is pulling away from the edge so the knife doesn't cut into it.
PS I've found that if you just make really fast alternating passes through the worksharp when you're finishing your sharpening it helps to remove the burr, also don't spend a ton of time on the fine belts or it will just get duller after a while, I do about 5 passes on each side and 1 pass with the strop. Also if you remove the angle guide and just hold the knife at a shallow angle while PUSHING the knife into the belt so it kind of curves around the edge and sharpening it like that while holding it while the belt wraps around the edge you can get a convex edge which is very sharp.
He should do a sharpening video comparing a non stropped knife with a stropped one. Would finally put to rest the comments telling him to strop. He's redone/added to videos before like the B&D sawzalls so I dont know why he hasnt tried stropping yet.
@@Trippsy05 I agree, I'd be really interested to see the difference myself, even on just a piece of leather with compound on it as when I strop my knives the difference is immediately noticeable.

As a guy who has done dishes in a pizza place, I can tell you those wheel cutters get to *insane* RPMs when combined with pressurized water. stay safe ;)

You should have put the pizza cutter on a bolt and stuck it in a drill and used that to spin it against a sharpening stone. That way you get even consistent angles

Hey Tyler, I believe that your problem with the wicked edge is that you need to strop the blade edge when you sharpen the blade with the stones because it leaves a burr on the edge which is what your feeling with your finger and thinking it is sharp. Also you can strop the knife on an old leather belt if you want which works great too.

With all these sharpness testing videos, Tyler really needs to invest in a strop and learn how to strop... I guarantee he's tested the sharpness with big ass burrs causing it to seem way more dull than it really is :/ as a full time knife maker and sharpener it's really frustrating to watch.
Those previous ones where he dulled them with concrete and more was painful to watch indeed and would expect many of those to be pretty much beyond repair.
At least this time he did not destroy them before trying sharpen them :P

I am happy he did, as it clearly shows that sharpening even a cheap pizza cutter makes a huge difference. Never no matter price range found a pizza cutter that from the start actually did properly cut on first slice.

Last time I used one of those, the work sharp that is, there was a way to lock it in the run position. There's a momentary switch and if you push it the other way it locks it on. That way you don't have to hold the switch the whole time.

Tylertube is right normal Pizza Cutters are made out of used pop cans and plastic DVD disc mixed to make the blade
Yo Tyler, there's a big difference between "push cuts" (which is what the edge on up bess tester measures) vs "slice cuts" (which is what the paper cut test measures). With a push cut the blade goes straight down while with a slice cut the blade goes diagonally down and imparts lateral movement. Think of it like a bread knife - a bread knife won't cut if you just push it straight down into the bread, but works wonders when you apply lateral movement. Same concept here just on a much smaller scale. So it's not all that surprising that the big cutter only registered 550 on the edge on up bess tester but still easily sliced paper.

I have a pizza cutter kinda like the one you had its long straight blade. Right after I bought it I sharped it on the same kind of sharpener . This was like 2 years ago i haven't had to sharpen its still sharp as hell .

I saw a video about knife sharpening recently, where they said that the higher grit numbers are actually bad for softer materials. So the lowest number you got the wheel blade to with the worksharp might be right around the highest grit that metal can handle... I'm no expert though so I'm far from certain.
I'd love if you could test different rotary blade sharpeners. I'm a quilter and go through rotary blades like water.
Tyler, it would be awesome if you could find the best metal for a knife and see what it would take to sharpen it below 100 on your scale. Or even lower.

You should do a video testing a curved sword vs a straight sword. Like, find the the most curved saber/katana type thing you can, maybe a kopesh even. Then, a blade that's totally straight, but about the same length measured tip to end of handle in a straight line. Then, dull them down to butter knife and see which one does more damage. After that, sharpen them up really sharp, and see how they compare at their best.
In the latest Project Farm video called Russian vs Usa knife sharpener he used the wicked edge knife sharpener on a dulled knife and got a result of 85. His stones went no higher number than yours.
*TylerTube* It would be cool to see you or someone else motorize a sharpened disc type pizza cutter. A high torque high rpm small motor, controller and lithium battery with a small kevlar belt drive or direct drive would be the ideal drivetrain. I'd like to see what a fast spinning smooth and sharp cutting edge would do and cut effectively. Or perhaps make an angle grinder attachment like that 😆
