    Serves 8:
    ​1/2 cup bulgur wheat, or quinoa
    1 cup boiling water
    1/4 cup fresh lemon juice
    ​1/3 cup extra virgin olive oil
    ​1 bunch scallions, finely chopped (about 1 cup)
    1 bunch parsley, finely chopped
    1/4 cup mint, finely chopped
    1 cucumber, diced
    ​2-3 tomatoes, diced (or 1 pint grape tomatoes, halved)
    1 teaspoon dried oregano
    salt and freshly ground pepper to taste
    ​Garnish: feta cheese (optional)
    Place bulgur wheat in a bowl and pour the boiling water over it along with 1/4 cup lemon juice. Cover the bowl and let stand at least 15 minutes until the liquid is absorbed. Season with salt and allow to cool.
    ​In a large bowl, combine all of herbs and vegetables. Toss in the cooked bulgur wheat.
    ​Dress with the olive oil and lemon juice.
    ​Season with salt and pepper.
    Garnish with feta and serve alongside anything.
    ​Enjoy!

    I am so happy you use bulgar wheat instead of quinoa. It makes a big difference.

    I wish I had a Greek chef to come to my home every day and make all these wonderful salads that you make-with some grilled chicken and beef, too. I think I would easily lose all the weight I need to lose.

    Hi Dimitra, then again you read my mind; I love Tabbouleh and I just got some ingredients to make it.     I am Lebanese/Palestinian & we never use cucumber & feta in Tabbouleh 🤭
    I like ur energy though..

      I AGREE.
      But I don't mine them . I'm more insulted when pple get humus chocolate, humus avocado, etc.. humus any flavor 🤣🤣

    Tabbouleh as it is made in Lebanon does not have feta cheese or quinoa

    Tom Waits was challenged to make a LP without using sax or clarinets which had featured in all his previous albums. He did add made a his tour de force Swordfish Trombone. Your sax and clarinet are oregano and feta. After a million views you start getting cryptic feedback.

      lol! The only way for me to get away from oregano and feta is when I'm preparing Pakistani food :)

      My family particularly my daughter 12 demands variety so I need some of your healthy that don't taste of oregano. My sense of taste is very unreliable since I lost my sense of smell so need to go off recipes for flavorful combinations. I hoping to pick up some Greek cooking books from a massive second hand booksale this year. Last year I got a community one from the Greek community in Tasmania that gave me ideas.
