    Just finished my mashed potatoes. Are you ready for the critique, guys? Ok, here is my honest opinion. I always try to be honest. These are.....better than mashed potatoes! How the heck did you figure this out, Chris?? I did everything exactly like you said. Oh my gosh! I am making a roast right now, and I can't wait to pour the juices on top for real mashed taters and gravy!!! Happy camper here!! 😄

      Thanks for that review. I have 2 roasts in my sous vide and cannot wait to make these mashed taters and carnivore gravy. Also, I'm going to make potatoe patties and fry them in duck fat for my meal tomorrow with bacon and egg yolks. Yumm-O

    I haven't had potatoes in over a year. Potatoes make my arthritis hurt so bad. Thank you so much for giving me back mashed potatoes. They taste great. This man is a genius.

    Ohhhh Myyyyy Goodness ... I just made these!!!! BRAVO!!!!! There is only one issue. Only one. My blender isn't big enough for me to fit my face in to lick the bowl clean!!! THANK YOU CHRIS!!!

    Observations: l've made these several times now.
    I must dry out my egg whites far more than you (and without browning) because:
    1) I find that I don't need to add any egg white powder at all (hence they reheat BEAUTIFULLY).
    2) I only need 1/2 Tablespoon of the plain gelatin.
    3) l need an entire 8oz cup of Heavy Cream.
    They come out next level yummy! 😋🤤
    We had friends over for supper last weekend and one of them raved about the "potatoes" for 2 days straight before l told her that they weren't potatoes at all. She was shocked!

      @@emmagraceoutlaw4656 I completely leave out the egg white powder, reduce the amount of gelatin to 1/2 T, and increase the cream to 8oz. Everything else I do the same (other than cooking the liquid whites much longer/drier than him).

    Hey Chris! Just wanted to pop in to let you know I made your Carnivore Mashed Potatoes, and they were delicious! BUT, the next day, I took the leftovers and rolled them into balls and put them in my mini dash waffle maker with a little fresh shredded parmesan cheese and made potato "cakes" out of them. Served them topped with Carnivore SOS. Thank you for all the work you put into creating great recipes! Love your channel!

    Mind blown 😳 I could NOT believe how well these came out! I’m trying my best to transition all the kids to carnivore without them actually realizing it with each new recipe I’ve added. They were all completely stumped as mashed potatoes was literally life in this house before I went full carnivore. The kids greedily demolished the whole pot of these and asked me why I was eating potatoes 🥴🤣🤣 I waited until it was all gone to ask if they would like for me to make more mashed potatoes during the week and they jumped for joy. Once I broke the story to them, they thought I was lying to cover myself eating potatoes. This is by far the best recipe I’ve found . Thanks a ton for this !

    After getting the "toasted gelatin" figured, I made a batch of these, and they are unbelievably delicious. I'm Keto so I do eat some veggies and I had a pork tenderloin with sauerkraut tonight. Previously I ate that meal with mashed broccoli, but these mashed fauxtatoes took it to another level. I can't wait to have them with a 1.2 lb. ribeye that's thawing in the fridge tonight. One of the other commenters said this was the "recipe of the year" and I concur.

    I just made these for the second time, and I think I got it just right this time. Absolutely no hint of an eggy smell. The trick is really to get all of the moisture out of the egg whites. It was almost indistinguishable from real mash, and it was only since I knew the ingredients that I could tell it wasn't real. My tip is: to cut down on time spend cooking the moisture out of the egg, I put it in the oven uncovered at a low temperature for about half an hour - it was almost completely dry. This takes away the main impediment of making this regularly. I also poached a few of the egg yolks and mashed it into the "potatoes" and ended with a really rich and creamy mash.

    Made the mashed potatoes for dinner tonight. My husband loved them. So we took some over to his mother to try, we asked her to taste my potatoes and tell me if they were OK or not. She said they were great and she was so surprised when I told her not one potato was in the recipe. Can't wait to try other recipes that Chris has come up with.

      I’m assuming freeze the mixture, cut it into serving size cubes, and then reheat those cubes.

      @@ChrisCookingNashville yes. This last time I used an ice cream scoop to make them into little balls and froze them. When I went to reheat them, I think I added some butter or milk to slowly reheat but it’s great to have them on demand in the freezer.

    I made these into fries! Sliced into steak fries, sprayed with tallow, air fried for 6min at 475F and HOLY COW. Dipped in ranch dressing and I could not tell the difference! Next batch I am going to add a tablespoon of allulose to help them brown so my baking time might be less. This recipe is amazeballs and hubby and I are so thrilled to have found your channel! Thank you! ❤❤❤❤❤

      @@decimus81 Chris has a recipe for Jalapeno Ranch Dressing that is so tasty! My body has no problems with a little garlic and onion, so it's all good for me. Maybe try some Primal Kitchen ketchup if you want to dip them, but a dip is not necessary.

      @@AM-md3om I did not, I refrigerated them in a loaf pan, then cut them into planks (steak fries) and baked those planks. I have thought about freezing them but they never last long enough to get into the freezer!

      Yes I actually am very sure it can be done. It may require a little less egg powder to keep it from getting too firm, but I do believe the right ratio will absolutely do that based on what I’m doing with next weeks recipe. Let’s just say low carb side dishes at cookouts will never be the same. 😉
      For now I’d say use just a little egg whites powder to leave the mixture a slight bit looser and then scoop and fry. Should work quite well. 😁

    I really enjoyed them but I just served there to my grandpa who is on the SAD diet and hates "healthy food". His face lit up and he said that they "weren't bad" with a smile on his face. He would eat them again! High five, Chris. You are a mad scientist genius!

    Waited too long to make this. However, as it is now St. Patrick’s Day and I am making the Colcannon for our family dinner, I decided to make it with the carnivore mashed potatoes instead of the regular way. If you don’t know what colcannon is, it’s simply cabbage, onion and bacon fried till golden brown mixed with an equal amount of mashed potatoes. Being keto, more ketovore lately, I couldn’t pass up the chance to really bring down the carbs in this tasty Irish side. Since the potatoes have essentially no carbs, I managed to turn a side dish having about 37.8g of carbs per serving to one that really does taste the same but with 5.6g per serving. Aside from the “potatoes” being creamier than usual, my husband couldn’t tell the difference. 😊 (He’s the Irish one in the family.)

    OK folks, my wife made Chris' mash potatoes along with a Mississippi Pot Roast. She took the juice from the pot roast and made Chris' Carnivore Gravy. I know this has a couple of non-carnivore ingredients for flavoring, but whether you like it ketovore or strict carnivore, this dinner was fabulous and you absolutely could not taste any egg flavor and the texture was just like mashed potatoes. We made real potatoes for my father in law. We served him both mashed potatoes side by side and he preferred Chris' faux mashed potatoes. In case you are wondering, we make great real deal mashed potatoes,so it was a true test. Cook them exactly as he said and you will be rewarded with a real comfort treat. 👍👍👍👍👍😋

    A little late to the party but had to comment. I’ve been keto for about 2 years and am kinda relaxed with it but have lost 90 lbs. was missing mashed potatoes but just knew they are not on my “plan”.     Hi, Chris! I had some of this left over, so I spread it out on a sheet pan and baked it until it firmed up. Then I diced it and sautéed it in bacon fat. It was so crispy, not eggy, and it was like hash browns! I’m going to try this method with coned beef hash. So excited! Keto people can add some onions, too.

    Tried this recipe as soon as it came out. My husband loved it so much! I found it a bit dry so i may add some more fat (maybe a couple egg yolks, more butter and more cream). This was a big batch for the two of us so i laid it out on a parchment overnight and cut french fry shapes to make fries, they make great french fries!

    Thank you, thank you, thank you! I saw this recipe when you first released it. However, I must admit I'm a bit of a lazy cook sometimes. When I saw the initial work needed, such as toasting the gelatin and how long the egg whites took to cook, I was afraid to do the work and end up disappointed. However, with Thanksgiving coming up, I wanted to give these a test run to see if I can make them for the big day. OMG! They were amazing! I am carnivore and hadn't had a stick-to-your-bones meal in a very long time. This filled that void. They are much better than the old cauliflower mash recipe I used for keto. While I taste a hint of egg, it is just a hint, but that texture, man, and the flavor are just phenomenal. I'll trust all of your recipes from now on. Good things take work. I realize that!

    I made this recipe a couple of weeks ago and I guess I didn't cook my eggs long enough because the "potatoes" tasted eggy. I made them again today and cooked my eggs longer. However, because you said the egg white protein powder was more for texture, I used buttermilk powder instead. I figured the less egg product, the less eggy the taste. My "potatoes" taste like potatoes this time! Thank you for the recipe.

    OMG!!! Just made these amazing mashed potatoes...absolutely Delicious! I must say that I loved them way more than real mashed potatoes. My husband came home from work and I asked him to try the potatoes ( not telling him they were not actual potatoes) and he had no idea they weren't the real deal!! What a win!     Chris, you are so incredibly creative! Thank you for helping us on our carnivore journey. FYI used leftover mashed potatoes mixed with some extra sour cream and shredded cheddar, stuffed into lightly melted provolone wraps (see Keto twins dumpling ideas) and made "Pierogies". gave them a quick sear in a very hot pan and topped with fried Kielbasa slices, so good. Thanks again!

      I have yet to try them, but I think you are 100% right! I came here after watching High Falutin' Low Carb's (Wes Shoemaker) VERY POSITIVE singular review of the recipe. His reviews usually pit two recipes against each other, so I've never seen him do a singular recipe review... Chris certainly gained a subscriber in me! I am now excited to see what else he's conjured up that will inspire me to continue my nearly 3 year long keto journey. I already lost 120 Lbs, but was just getting tired of the high maintenance and strict dedication required of keto. I just want to live my life, keep it off and, perhaps, shoot for another 25-30 Lbs. At 55 years of age when I started keto, I just never thought any of this was possible!

    I made these today. I have to say, I am stunned. It took some time to get it to blend, and in the end, I had to transfer it into a bowl, and finish blending with a hand mixer. At first, when there were little bits of egg still present, of course it had an egg taste, but wow, after it totally was blended, it was insane. Rich, smooth and creamy! I served it with a seared ribeye, and butter. I swear, they are so filling and rich! Delicious! A little work, but… so worth it!

    Hi Chris. Excellent recipe. Im alone so I halved the recipe. First time I made it it had a slight eggy taste. Sorr of like Maria Emerich's hard boiled egg pudding or deviled eggs. (I have super acute sense of taste and sme.) However, the egg taste was gone by the 3rd day in the fridge. I decided to make the egg whites first and I let them sit in the fridge 5 days. (Didn't mean to let them sit that long but did not get the chance to get back to thee recipe till then.) I heated the egg whites in the microwave for 2 min followed the recipe and it turned out perfect. No egg taste at all. Thought I'd share.

    This is hands down the BEST keto/carnivore recipe I've ever had! Unbelievable! I swore I was eating mashed potatoes. Creamy, starchy, buttery mashed potatoes. I did add a dropper full of mashed potato extract but other than that I followed the recipe to a T. Amazing!

    Made them. Loved them!! I’m don’t understand how it’s possible to make egg whites feel like a starch in your mouth, but Chris has done it! Nothing difficult about this one. It does take a bit of time to cook the eggs enough but it’s not unreasonable. I’m eating these with some sautéed chicken on top and I’m just dumbfounded. When you’re talking substitutes it’s usually harder to mimic the texture than the taste but this recipe has nailed both!! Doesn’t feel loose or thin in your mouth like whipped cauliflower and no one would think it’s egg. I completely forgot the egg white powder at the end because I was just so shocked at how it transformed in the blender. It feels like a real life starch. They are thick and rich. Really incredible stuff Chris! I made both the rice and taters today while off of work. Look forward to eating them all weekend! Keep it up!!!

    Just made these for me and my wife. All I can say is: YEAH BABY!! Whoohoo!
    We just keep saying “mmm” “mmm” “mmm”. My wife commented on how she has missed this texture and flavor. We slapped some butter on there. Made a quick homemade gravy. And went to Mashed Potato Heaven. The angels are singing as we speak. 👍👏🥳

    I finished making these and they are beyond FABULOUS!!! I was truly surprised when I tasted them and they taste exactly like mashed potatoes!!! I couldn't stop eating them! I'm keeping a small jarful of toasted beef gelatin on hand so I can quickly whip these up anytime I want. I do plan to cut the recipe in half next time so my old, 2-speed blender can handle it better. This isn't a difficult recipe but a good blender is a must for smooth processing. Also, the 32oz carton of eggwhites easily makes enough potatoes for a family of 6 just in case anyone was wondering.
    I'll never figure out how you came up with this combination of ingredients to make such delicious mashed potatoes , but I'm absolutely thrilled you did! 🏆

    If you haven't tried this recipe yet, Please Don't! I just know its going to cause an egg white shortage, and or, drive up the cost. I cant honestly say I cant think of another mock food that has ever been better. I made them last Friday for a friend to go with our Ribeye. Needless to say she jumped on the interweb and ordered everything she needed to make them, including the food processor. I was really concerned about the leftovers and how the texture or taste would be, so here it is Monday and I decided to just reheat and eat. OMG!! I think its even better than when we had them fresh. I think I want to be selfish and keep this amazing recipe a secret just to impress people. LOL NOBLE PEACE PRIZE WINNER HERE!!

    Made them! Delicious! I did do some variations...I did the egg white in the microwave (melt butter, add white, cook 1 minute, stir, repeat until dry. It took total of 6 times (6 minutes). Didn't have sour cream, used tablespoon of mayonnaise. Have leftovers, so tomorrow's experiment will be fries with gravy. You are an amazing genius!

    Chris, I am floored. I made these for the first time tonight and prepared myself for disappointment. NOT because your recipes aren’t awesome, but because I have been let down by “potato” recipes one too many times to go into another faux-tatoes recipe without epic skepticism. But I am here to tell you that this is the WAY. They are so, SO good. They REALLY and truly do have a solid real-potato flavor and texture. I used a food processor which worked FABULOUSLY for this recipe! And has the spout for adding the heavy cream, egg white powder, seasonings, ect.
    Thank you, THANK YOU from the bottom of my heart for recipes like these that make this diet actually sustainable for me.

I want to use a food processor too, but am wondering how you follow Chris's instructions of "Slow blend in the beginning..." How are you able to change the speed of a food processor? Are you using "Pulse" in beginning? TY for helping me out :)

      @@niccidee782 Not sure how helpful this will be, but my food processor has 3 settings: pulse, low, and high. So I started it out pulsing a few times and then transitioned to low, and then finished it off on high once I added the splash of heavy cream. You should definitely try the recipe! I’ve made it multiple times now, and I’m getting faster at cooking the eggs a little quicker each time without browning or over cooking them.
      One other tip I would offer (and I think Chris might have mentioned this in the video): when you go to reheat them in the microwave, definitely use a lower power setting and DON’T overheat them. I made that mistake once and they lose their texture if you reheat them for too long or use the full power setting. I use the reheat setting on my microwave (which I think is about 50% power) and give it 30 seconds then mix, then another 30 seconds and mix. That’s usually about all it needs to get hot again without losing the original texture.

    Surprisingly the final results did have that feel and taste of mashed potatoes. I will say that you may want to have a small portion when serving up... They are rich and satiating. I served up with slow cooked chuck eye beef...Delicious!

    Thank you, Chris! Loved these mashed "potatoes". The look and texture are amazing - just like real potatoes. Felt like I was eating real potatoes - it "scratched that itch" for comfort food carbs. Didn't really taste like potatoes, just buttery, but when served with a savory gravy you wouldn't know the difference.
    Took some time to prep everything, but I think it will get easier with a little practice. Toasted extra gelatin for future batches. Not having a Vitamix blender, I had to add more cream so the mash wasn't quite thick enough. Next time I will whisk the egg white powder in after blending so I can add less cream. Keep the frying pan temp fairly low to avoid browning the egg whites. After they were fully cooked I left the pan on very low heat for 10 min while prepping the rest of dinner, stirring occasionally. This was following Chris's advice to cook out at much liquid from the egg whites as possible. Didn't smell "eggy" but I'm not very sensitive to the sulfur smell. Added a couple drops of mashed potato flavoring I already had. Need to experiment with the ideal amount to use. Looking forward to trying other uses of the mash such as fried potato patties, stirred into a "potato" cream soup, topped with cheddar cheese or sour cream, chives, and bacon bits.
    Reheating: Chris said they were best eaten fresh and did not reheat well. I had no problem with reheating. Used defrost setting on microwave and stirring a couple times to avoid overcooking in spots, but not sure if that is a problem.

    Saw the Keto twins make the mashed potatoes today so I was inspired. Think I’m having a problem with my Vitamix or I didn’t add enough cream and they came out with the weird lumpy texture. But there’s a fix for everything I put them in a bowl, added more cream and whipped them with my hand mixer and came out smooth and creamy. They were delicious.

    I desperately wanted to try this recipe but didn't have enough liquid egg whites so I decided to try it with egg white protein powder which is essentially dry egg whites. I halved the recipe because it's just me so I used 1/2c egg white protein powder unflavored Now food brand, and 1 1/2c water, whipped it up in the blender then cooked it. I also didn't have any mozarella or cream cheese and used cottage cheese. Worked amazingly well, tasted convincing. I ate 1/4 of the original recipe as my entire meal but I wanted them loaded so I added in some shredded Colby jack cheese and some real bacon bits. They were amazing. I had the rest for breakfast the next day. It does thicken considerably after chilling and I preferred them even more the next day. Now I'm thinking of using this in potato and leek soup, potato curry, the possibilities! Thank you for this amazing recipe.

    So, honest opinion. These are completely tasteless but have the exact texture of mp. If you've been carnivore for a while you will LOVE this recipe. I tweaked mine to make a loaded mp. To the end product I added a little more pepper, garlic powder, sour cream, bacon and cheddar cheese. Well done Chris. Keep up the good works!

    OMG Chris I did it!, it was a slight egg taste not much . Then I add garlic onion powder that did the trick. To eat it the next day it was very thick so I micro 15 sec stir till it came back. I still had more left I made a carnivore german pancake!!! I to0k pork rind bread crumbs pinch of baking soda add my seasoned creole chicken too, used about cup of the potatoes, made them into 1 inch and a half thick pancake , add sm amount of avocado oil to the pan, let it get hot enough to get a crisp top and bottom 4min each side sour cream on the side! Thx

      @@ChrisCookingNashville Hi, I enjoyed your video, and your mom is so adorable! But can you please help me understand. I don't doubt what you are saying since everyone in the comments says they taste just not mashed potatoes, but the work, time, energy, ingredients, cost and especially the calories to make these carb-free mashed potatoes is just beyond me. It's entertaining to watch, but why not just eat one ice cream scoop of packet mashed potatoes?
      I get the (pseudo?) science behind it which says the body's primary source of energy is carbs/sugars, and if you don't give it that, after about 16 hours, your liver starts to release its stored glycogen. That runs out after 24-48 hours and then your body has to burn fat.
      But, on the science side, I feel like if you ate low calorie, carbs or whatever, your body would have to burn fat anyway to give you the additional energy you need.
      And I also think if you ate 5,000 calories a day of just protein and fat, with no carbs, your body would still store the excess as fat.
      But somehow the last two things don't make sense to carb haters, and I don’t understand it. I’ve been on a low calorie diet (but eating plenty of carbs like Schmidt bagels and bread, mashed potatoes, rotini, spaghetti and elbows, refried beans, corn, rice, breakfast cereal, oatmeal, pizza, strawberries, apples, grapes, juice, etc, and I’ve been losing almost (but not quite) a pound a day. 33.68 lbs in the last 37 days. And I haven’t really added exercise yet, so it’s not like I’m running a marathon every day.)
      Earlier, for example, I had 3 Hormel chicken tamales (1/2 can) for 130 calories,
      1/4 can Progresso creamy tortellini soup (95), 1/8 Walmart pasta salad (99),
      1/7 can Walmart green beans (12), sugar free lime jello (10), great value small ice cream sandwich (95), 6 ice chips (15) = 456 calories. That’s a lot of food for a very reasonable amount of calories. I’m not physically able to stand and cook from scratch until I lose more weight, but you can lose weight on processed food if you make wise choices (for example the chicken tamales taste exactly the same as the beef ones but are 60 calories less) and control your portions. That’s the key (for me at least).
      One more example: get the 96/4 ground beef instead of the 70/30 or 80/20. It’s only 70 calories for 2 oz patties (same size as McDonald’s), get Schmidt 647 buns (taste the same but only 80 cals instead of 120), add lots of lettuce (5), yellow mustard and black pepper and you have a 155 cal Dagwood stacked high burger vs a 250 calorie plain hamburger from McDonalds.

      I’m going to make this answer really simple.
      I don’t count calories because they’re a lie. It’s literally a unit of heat measurement that doesn’t apply to an open chemical system like the human body digesting food.
      I don’t eat carbs because a carb food addiction is a massive issue for me (like you’d be crazy to ask an alcoholic why they don’t have just a small sip of alcohol). I am not a carb moderator and have never been able to “just count calories” to lose weight.
      There is ample evidence carbs are the issue, and combined with the addiction I have to them, this is the right alternative at all times.
      Also, packaged potatoes are disgusting and a lazy cook’s way out. They’re not real food.
      If you don’t understand why those things are what matters here then this channel will never make sense to you. Suggest you east Dr. Ken Berry from top to bottom of you are willing to do the research.

    If you seive eggwhites through a standard wire mesh, water comes out!
    Doing this makes beautiful fried, and especially poached eggs. Holds a solid shape by removing it 1st.

      I get mine online. You can also get Knox unflavored gelatin in most stores. Any unflavored gelatin should work. I just find beef is the best.

    My HUBS is absolutely going to go nuts for this! He is carnivore but a barely recovered potato and bread lover. When we did keto he actually loved the mock roasted radish potatoes. This is a total level up!!!

      Hey, you've got to try his brioche bread. A little tweak I did was, I added 2 tbs of allulose for calorie free sweetener and it also helps the texture of flour free bread, AND I borrowed Nellie's frozen grated butter technique, I added the butter as I was doing the last step of folding the ingredients right before baking. I put dough in a zip lock, cut the corner off and formed the dough into high biscuit shape. Baked for 15 minutes. Its the best carnivore bread I've ever tasted!

I scrimped and saved for years babysitting ( fifty cents an hour)….and bought my $1000.00 D-35 in Nov, 1973 when I just turned 15 years old. 🎼It was stolen in 2012 in a move from one city to another….heartbroken and devastated me….lost my D-35 serial number 321258!     I just have to come back to rave about this recipe. I'm one of those ungrateful viewers who rarely takes the time to comment, but I just have to make an exception for this recipe. OMG. It's amazing, and so good. For all those who haven't tried it, it's so worth buying the ingredients to give it a go. I'm thinking of making the potato salad recipe, that Chris posted, but using the "potatoes" to add to this recipe for a more chunky mashed potatoes, but for now, I'm enjoying my carnivore mashed potatoes with my tri-tips - for every meal for the last 2 days.

    I just made these again. This time I didn’t have, fresh mozzarella, sour cream, or garlic powder, used more cream cheese, and a little bit of ground cumin. All the other ingredients the same. Some “make it easier” suggestions have all your ingredients at room temperature. Melt your butter completely letting it steam off some of its water before adding the egg whites (you can do this at a slightly higher temp then let it cool slightly before adding egg whites) it will take 20-30 minutes for the egg whites to get dry enough. You will see the fat becoming bigger and bigger on the surface of the liquid. The dryer it is at this point the easier it will be to get the texture you want. Instead of using a regular blender, put the egg whites and the remaining ingredients in the serving bowl and stir them up. Then use a stick blender to mash them to the texture you like. If you have no white pepper and want to use regular black pepper, stir it in after they are at the texture you like, otherwise it may turn an unappealing gray color.

    Wow! A must try. My mother always beat one egg into her mashed potatoes at the end which really enhanced the flavor , color, and texture. Bet it would work with this, too.

    👋 from Montreal, Canada. Call this what you will, Fauxtatoes, mashed eggs, etc etc. It won’t change the fact that they are delicious! I don’t have a Vitamix made half the recipe in my little kitchen aid blender and they came out just fine maybe not as smooth as I would have liked but that doesn’t matter to me. I have leftovers , now I’m thinking 🤔 what if I used IndigoNili’s breading recipe and made Tater Tot’s! Back in the day it was the best thing our high school cafeteria ever served lol to this day never found anything like it on the market because it had mashed potatoes in the centre opposed to shredded or plain potato . Could be interesting 😉 Kudos Chris for thinking outside the box and making us a part of your journey. Looking forward to what comes next and congrats on your weight loss. Cheers

    Made them tonight. Since they are all protein, I ate them as my main dish. Delicious! I have not had real mashed potatoes in over 3 years. I think these tasted like I remember. It does not matter. They are great. Left overs in fridge. Now if I need a protein snack I can just pop a bit in a bowl and microwave

    Oh my god this is going to be a huge game changer! I’ve been carnivore since last year and I’ve been able to get 3 people on carnivore just last week and 2 more are considering it. This will help their transition so much! Making for dinner tomorrow night!

    This is alchemy!!! I’ve been putting off making these for 2 months because of past keto disappointment, mac and cheese, biscuits, fries etc. I tolerate eating eggs. BUT THIS RIGHT HERE IS AMAZING!!! 🤯
    They are good on their own but with some butter or gravy you really wouldn’t be able to tell that they aren’t cream potatoes.

    So, I decided to make these last night....I don't mind cauliflower mash, but like you said, they really don't taste like mashed potatoes, so I decided to give this a go! I can't even believe it! these are my new FAVORITE keto mashed potatoes!! They do take a while to make, but they are SO worth it!     OMG I finally got the time and ingredients and I'm floored. It's crazy, bring-tears-to-the-eyes good! I misread the ingredients and used an entire stick of butter but it still worked.     I make awesome "real" mashed potatoes. However, I am diabetic, and potatoes are most firmly off the menu. I eat mostly keto with some carnivore recipes, and let me tell you-- these were amazing. I put a serving in a bowl and surrounded them with Italian green beans in a sauce made of the juice reduced down with cooked thick cut bacon. It tasted, altogether, just like when I made the dish with real mashed potatoes, except that I could not finish all the fauxtatoes. Had those mashed P been real, I would have eaten them till I fell asleep in my chair because my sugars would have been outrageously high; as they were, sugars stayed low where they should be. Thank you SO much for this recipe!!!! I want to try them next with a shepherd's pie.

    I just realized that I'd posted a comment of my experience, making this mashed potatoes recipe, on another of Chris' recipe, so I wanted to post an update here because this is very interesting. I'd posted that the potatoes had great texture, but tasted like hardboiled egg whites, when I tasted it right after making the recipe. I'd cooked the eggs for almost 45 min, and there were no liquid left, so it was baffling that it had the egg taste. I put the item in the fridge overnight. This morning, I warmed it up and it has absolutely no egg taste. Just creamy, potatoes like taste. I'm not sure how the mixture must have changed, but it's something to consider if you run into the same problem I had.

      This is likely due to the rest of the sulfur gas dissipating overnight that hadn’t cooked off yet. Glad you enjoy them with no egg flavor today. 😊😊😊

      Yes this is a great trick. I make these a day ahead of when I want them. Refrigerate then the next day reheat and serve. Tomorrow we are having bottom round steaks. This is a tough cut so I put them in the Sous vide for 30 hours. This breaks down the tough tissue. When they are done in the Sous vide I will sear them and serve with this mash and gravy. Great dinner!

    I dont know how or why but replacing the heavy cream (i ran out) with home made chicken bone broth improved the texture of this recipe A LOT. Its smoother, less grainy in the throat. I think its helping the egg protein powder blend in easier. Not sure! Regardless, your recipe has been a total game changer. Thanks a lot :)

    I gotta tell you, man. THIS IS PHENOMENAL!! I was very skeptical because I hate eggs and was concerned I would get the ingredients and end up tasting eggy or not good. I saw highfalutin low carb’s video on your recipe and his reaction had me sold!
    I made your recipe and used it for shepherd’s pie and OH MY GOD THAT WAS JUST FANTASTIC!!! I kept telling my husband “I can’t believe this is not potatoes!! What kind of sorcery is this?!” It legit tasted like real potatoes!! It refrigerated well and was reheated well also! Gave some of the leftovers to my husband for his lunch at work and he told me one of colleagues who learned about what’s the substitute was and he was shocked and said “that’s magical!”
    I truly thank you, Chris, for this amazing recipe!! It is worth the effort and time!!

      That's my concern too - I hate both eggs & cauliflower! (I think they share a sulphur component or something...) But I sure do miss mashed potatoes - esp around Thanksgiving. Thanks for the feedback - you've given me the courage to try these!

      If you’re extremely sensitive to the egg flavor you might try making them the day before without the egg powder, then reheat them gently and add back to the blender and use more cream or butter as necessary to blend, then add egg effort powder right before serving. Letting the cooked eggs sit overnight allows the sulfur to dissipate a lot more to ensure the least egg taste.

    You have genuinely changed my low-carb life with this recipe. You simply cannot tell they aren't mashed potatoes when combined with literally any other food. I no longer feel denied a comfort food filled with carbs that is so convenient to put with a whole bunch of wonderfully keto or carnivore main staples.     This is amazing. My family is still not Carnivore so we had both potatoes and this recipe. You could tell by looking, but we had a blind taste test and people preferred the carnivore "potatoes".

    I just finished making this... With a couple changes cause my husband can sniff out sour cream - so I used plain whole fat greek yogurt and became I forgot the fresh mozzarella I used ricotta. I must say it definitely taste like mash tators!
    I was wondering about using a mixer instead of the blender? I have a Ninja with the cup and not a regular blender. I had to do it in batches.

      I don’t know about the mixer because protein is a lot harder to break down than starch. Mixers work well on potatoes. Not sure about egg whites. But you could try.

      Unfortunately no. The smell is all the sulfur gases coming out and it’s the most important part to get the egg taste out of them. Without that they taste like eggs. Sadly it’s kind of a necessary evil for this recipe and technique I think. Otherwise they taste like egg whites which is what some folks are experiencing when they say it tastes like eggs. They didn’t get all the sulfur gas cooked out. I guess a fan and an open window is all I can suggest. 🥴

    OMG 😱 these “mashed potatoes” are a MUST for anyone in the carnivore/keto community or anyone in general! My daughter who's just started her carnivore journey and is very peculiar about food, when she first saw the video was hesitant, but when she tried it she was SHOOK. The texture, smell, and taste it was all somehow BETTER than regular mash! P.S. I added some chopped garlic during the butter melt process then added the egg whites and I think it kicked it up a heavenly notch (if you love garlic as much as I do lol) 😁🙏🏻
