Biga and Polish is typically used, I’ve done with sour dough as well and makes a great dough! Direct works well also but you miss out on the fermentation stage flavor

Just used my Gozney to make pizza for the fam and I couldn't be happier. It is so well build and is a tank of an oven

The dome is metal, which is a big no no! I'd rather get a real Italian all brick oven and buy a Valoriani Baby or Zio Ciro!!
