    So nice to see people sharing recipes. Today many Puerto Ricans still rinse the rice. I was told by my mother that the water helps by bringing up to the top unwanted rice grains that have black spots and other unwanted particles. Rinsing a few times will also take out most of the starch.

    Love watching you both. Isn't it something how some techniques are similar amongst the Boriqua kitchens? I make my sofrito in batches also adding recao and ajicitos and freeze. My mom's dried beans always come out delish. I've got to get on that bandwagon too. Michael said, Peter needs to make pancit sutanghon!

    Wash off the dried beans with water then drain. Add more water to the beans, a few cloves of smashed garlic and soak overnight for 12 hours. (You can add the garlic after soaking them if you don't want such a strong garlic taste.) Add your dried seasonings, sautéed onions and diced tomatoes, then cook the beans in the same water for 45 to 60 minutes at a low to meduim heat. 😋 Test texture by mashing between your fingers. They should be 👍🏾great.
